This crispy quinoa foil is an irresistible treat, works as a snack and as an accompaniment to other dishes, provides texture and flavor and is gluten-free.

I am sure you have ever tried the crispy parmesan cheese, it is a classic, it is very easy to make and it is delicious.

It is usually presented as an aperitif and is very nice to decorate dishes, if I had to put a fault, although I am not a "calorie counter", I would say that Parmesan cheese is very caloric and should be taken in moderation, especially if we want to keep ourselves.

The recipe that I bring you today, can fulfill the same function as the crispy parmesan, but providing much less calories, it is a crispy quinoa that has nothing but quinoa, water and spices.

The crispy gluten-free quinoa is lighter than the classic parmesan cheese crisp. 

 

Continuing with that of calories, which I already tell you is not what should matter the most, the BEDCA database indicates that Parmesan cheese contributes 367 kcal / 100g and that raw quinoa contributes 306 kcal / 100g.

So keep in mind that to prepare some crisps, you use 100 g of Parmesan cheese, at least, instead to make this crisp you need 1/3 of that amount, approximately 30 g of raw quinoa.

The quinoa, once cooked, greatly increases its volume, so the 100 g of raw quinoa turned into 4 cups of cooked quinoa, of which I used 1 and a half for the crunchy you see in the image.

In the recipe I specify the quantities so you don't get messed up, but it doesn't have to be exact either, that's the good thing about this type of dough, which doesn't require too much precision.

Quinoa properties:

  • It is a pseudocereal.
  • Without gluten.
  • Nutritional values: Each 100 g of raw quinoa provides 306 kcal, 15,5 g of protein, 5,5 g of fat, 7,9 g of fiber and almost 50 g of carbohydrates.

Curiously, quinoa has more calories than rice, but since it contains more protein, more fiber and less carbohydrates, it is more nutritionally convenient.

It is a food rich in carbohydrates, but being rich in fiber they are slow absorption, even so, you must control your intake so as not to exceed the amount of carbohydrates you consume, especially if you are not going to use them.

Quinoa is ideal for athletes and people with a medium-high activity level, but just like rice, if your day is going to be sedentary, consume it in moderation, 70 g of cooked quinoa may be an acceptable ration.

 

Quinoa is a pseudo cereal rich in carbohydrates, protein, and fiber.

 

With this crispy quinoa you will consume little, if you serve it as a snack, or as a complement to other dishes, it will be much lighter than taking bag potatoes or any other fried snack.

I usually make a plate each time and once cooked, I cut it into pieces that are generally irregular, and serve it with hummus or accompanying a vegetable cream.

I also like to take these crunchy bits with a homemade sauce of yogurt, lemon and mustard.

Ingredients
  

  • 1,5 cups cooked quinoa (the cup has a capacity of 237ml)
  • 3/4 cup water
  • 1 teaspoonful onion powder
  • 1 teaspoonful oregano (you can put other spices)
  • 1/2 teaspoonful sea ​​salt
  • 1/2 teaspoonful olive oil to grease the surface

Elaboration step by step
 

  • To start with this recipe you must soak the quinoa for at least 4 hours, it is important to eliminate the saponins. After that time drain it in a strainer and wash it very well, remove all the foam that comes out.
  • Cook the quinoa in abundant boiling water for approximately 15 minutes.
  • Drain well.
  • In the mixer glass put the quinoa, the spices and the water, beat well, there will be a liquid paste.
  • Preheat oven to 200ºC.
  • Make a baking sheet or silicone sheet and put it on the oven rack. Grease the entire surface well, with a few drops of olive oil, brush the entire area where the dough will be in contact, otherwise it will stick.
  • Pour the dough and spread it with a tongue or with a shovel, try not to leave any gaps.

  • Bake 10 minutes on each side, I did it at 200ºC on one side and 180ºC on the other. To turn it over, take the dough out of the oven and on another piece of paper, protect yourself with mittens to avoid burning yourself and turn it over quickly.
  • When you see that it is golden remove it and let it cool a little, you already have it, you can cut or break it into the pieces you want.

Notes

Things that have happened to me preparing this crispy quinoa:
  • The initial idea was to make a pizza dough, the first time I went to make it it was very fine, I turned it into a crepe and filled it with a sauce of onion, mushrooms and spinach, delicious!
  • The second time I wanted to prepare it, neither pizza dough nor crepe came out, we ate it in pinches because the flavor was incredible, but the consistency was totally inadequate, the problem was that I forgot to grease the surface, and it stuck.
  • The third time, it has been this and the result is this delicious crunchy gluten-free quinoa, ideal as an appetizer and as a complement or garnish to any dish, the trick, bake it well on both sides, it is essential to turn it and grease the surface so it does not stick.
