Ingredients
  

  • 500 grams steamed pumpkin
  • 3/4 cup Cow milk (or almond milk)
  • 3/4 cup chicken soup (or vegetable broth)
  • 1 chive
  • 1 garlic clove
  • 1 tbsp extra virgin olive oil
  • 1 pinch sea ​​salt
  • 1 pinch ground white pepper
  • 1 artichoke
  • 1/2 tbsp pumpkin and sunflower seeds

Elaboration step by step
 

  • In a saucepan, add the oil and sauté the onion cut in julienne and garlic, season with a little salt.
  • Add the squash previously cooked to steam or raw, cut into cubes, give a few turns.
  • It is time to put the broth and milk, bring it to a boil and let cook 10 minutes if the pumpkin was already precooked and 20 if it was raw.
  • Season with salt and pepper to your liking. Turmeric also does well and helps to enhance the color of the cream, if you like you can add a pinch. (I did not put it on this time and the color is equally spectacular).
  • Crush all the ingredients well. It is convenient to have a little extra broth, in case it is too thick to clarify it a bit. In that case, you should try it again and adjust the salt and pepper. 
  • Reserve the cream.
  • Clean the artichoke and cut into thin slices, if you want to have this work done in advance, you can keep the artichokes clean in water with lemon, to prevent rusting.
  • In a pan sauté artichoke slices with a few drops of olive oil. In the same way, skip the seeds too.
  • Serve the cream, put in the middle the artichokes and around the seeds. Finish with a little salt in flakes. Enjoy!
