In this survey there were answers of all kinds, biscuits, cakes, soups, creams and this rich Creamy Pumpkin Pasta Sauce I prepared the other day.

Of all of them one that I especially liked was the Baked pumpkin with blue cheese, the idea of ​​mixing the pumpkin with an intense cheese fascinates me, and if I like the pumpkin, the cheese even more, especially if it is strong.

 

Prepare the baked pumpkin dice with blue cheese or with your favorite strong cheese.

 

You can also prepare these pumpkin dice with goat cheese, or with some other intense cheese that melts in the oven.

You should use a cheese that is strong because the grace is in the contrast of flavors, the sweet of the pumpkin and the strength of the cheese.

The elaboration is very simple, make a mixture of olive oil, salt, pepper and a little garlic powder.

Brush the pumpkin dice with the flavored oil and bake. When the squash is soft, add the cheese on top and continue baking until it melts.

It is a delicious tapa, it combines great with a dry white wine, as an entree, to share, it is very rich.

Learn to distinguish these two concepts: glycemic index (GI) and glycemic load (GC).

 

Glycemic index and glycemic load of pumpkin:

Pumpkin is a low carbohydrate food, but its glycemic index (GI) is 75, quite high, however its glycemic load (GC) is low, what is the reason ?, I explain it below.

To calculate the CG of a food ration, you have to divide the GI by 100 and multiply the result by the amount of HC in grams of that ration.

For example, for a serving of 100 grams of pumpkin, we divide its GI, 75 by 100, and it gives us 0,75, now we multiply by the amount of carbohydrates that contain 100 grams of edible portion of pumpkin, 4,59 gr.

0,75 4,59 x = 3,44

Rounding the result, we conclude that 100 grams of pumpkin have a glycemic load of 3,5, that is, very low.

This data is essential to know how a food will influence our blood glucose.

  • 400 grams pumpkin
  • 100 grams blue cheese in leaves

  • 1/4 teaspoonful sea ​​salt
  • 1/4 teaspoonful onion powder
  • 1/4 teaspoonful dry thyme
  • 1 pinch freshly ground pepper

Elaboration step by step
 

  • Preheat the oven to 200 ° C for 10 minutes
  • Cut the squash into dice, the more regular the better. Reservation.
  • Prepare the oil with the spices, mix everything in a bowl and beat it well.
  • Put the dice in a baking dish and brush the pumpkin dice with the flavored oil.
  • Bake the pumpkin for about 20 minutes.
  • After that time check that it is well cooked with a stick and take it out.
  • Add the blue cheese over the dice and continue baking until it melts.
  • Serve the dice as an appetizer, they are a delicious tapa. Be careful not to burn! 😉

Notes

  • You can make the dice of the size you prefer, but ideally they can be eaten in one bite, approximately 2 x 2 cm.
  • To glaze them, prepare the oil with your favorite spices, I propose this combination, but choose yours.
  • As for the cheese, I have chosen this blue cheese in leaves, but a goat cheese, feta or even a provolone, combine equally well, choose the one you like best.
  • A good idea is to serve the punctured dice on sticks to take them as small bites, you will love them.
