Few days ago I wanted to dine lightly, as we are in Christmas season, so despite being conscious and worried about not eating too much, in these days the meetings with family and friends who I do not see during the rest of the year are typical... and all we know what this means: a lot of food, usually.

Meetings happen so you always end up eating out of home and having an extra glass of wine. Yet another one, maybe.

So when you come back home, you need options for simple, healthy and light dishes.

 

During the Christmas season try to compensate the possible excesses by eating lightly when you are at home.

 

So I prepared a couple of simple options, two bowls with smoked cod and the same base of arugula and purple onion previously macerated with salt and lemon juice.

To one I added orange slices and the other blue tomato, both combine perfectly with the cod, they have an acidic and fresh point at the same time.

To dress these bowls a vinaigrette based on extra virgin olive oil and apple cider vinegar is great. If you prefer to give them an oriental touch, you may season with soy sauce and sesame seeds.

The most striking thing about this tomato is the blue color of its skin, while its interior is red.

Its texture is juicy and in terms of its organoleptic characteristics highlights its intense aroma and fruity flavor.

Its blue color is due to the accumulation of antioxidant substances, the pigments responsible for this tonality are the anthocyanins, (flavonoids), also responsible for the purple color of red cabbage, for example.

Anthocyanins accumulate in the skin of the blue tomato, the variety is called "Indigo Rose", while the interior is a deep red.

 

Anthocyanins are flavonoids, with high antioxidant power.

 

This variety of tomato is the result of a genetic modification that was carried out for therapeutic purposes, in a laboratory in the United Kingdom, the genes of tomato were altered with those of a flower that contains a lot of anthocyanin, to obtain a product that had many more health benefits.

The blue tomato has high antioxidant power and is rich in vitamins and minerals, it contains them to a greater extent than traditional tomatoes.

It is also true that its price in the market is significantly higher than that of the other tomato varieties, but it is a different product that is very interesting from the nutritional point of view.

As I mentioned before, in addition to preparing a bowl with blue tomato, I also prepared a version with mandarin, use orange if you prefer, its acid, fresh and fruity taste combines very well with cod and is another way to take a salad with a different touch.

The truth is that I love to include fruit in my salads, it gives a very special touch.
