There is a dish that I love because it meets all those characteristics and also allows many versions according to the tastes and needs of each person.

These are Vietnamese spring rolls, a recipe full of color, flavor and freshness.

These rolls are very versatile, you can prepare them with chicken, strips of pork, shrimp, various vegetables or even with fruit, they are usually accompanied by a sauce and eaten cold, they are perfect for this time of year and also to take to work.

To make Vietnamese spring rolls we need rice paper, it is a product that can be purchased in many grocery stores, they are made of rice, tapioca flour, water and salt and are suitable for vegans and vegetarians, and since they are made of rice they do not contain gluten.

To use them you have to hydrate them for a few seconds, when they get wet they soften and become transparent, thanks to that, the rolls once made are beautiful and all the color of the ingredients of the filling can be seen through the wafer, the result is very aesthetic.

As you know, I love beautiful dishes. I think it’s a fundamental part of preparing any recipe, it makes them much more appetizing.

 

“On-the-go”: Prepare a good amount of assorted Vietnamese spring rolls, make sure to store them in an airtight container with a layer of paper between them so they don’t stick together, and take them to work to eat the next day.

 

The choice of ingredients will greatly influence the final result, not only because of the flavor, but also because of the color, the more color the better!

It is also well known that the properties of food can be identified by its color, so the more varied the colors of a dish, the more nutrients it will have.

To achieve this, try mixing different vegetables and fruits.

If you have meat and fish, chicken and shrimp work very well, but you can also use pork.

As for cheese, the best are fresh cheese, feta cheese, and goat cheese. Keep in mind that if you fill the rolls with very hard products, the wafer will break easily, so try to use soft ingredients.

It is a great way to get them to eat fruits and vegetables.

You can adapt them to their tastes using the ingredients they prefer.

The most difficult thing when preparing these Vietnamese spring rolls is handling the rice paper and rolling them correctly. Y

ou must follow the rice paper manufacturer’s instructions, hydrate it for just the right amount of time, and handle it quickly so that it does not stick or break.

As for the filling, as I mentioned before, you should make sure the ingredients are soft.

That’s why it’s a good idea to grate the carrot and blanch the red cabbage before slicing it into thin julienne strips.

If you’re adding lettuce, use only the leaves; remove the stems.

Use baby spinach; it’s much more tender.

Shredded chicken and soft, tender cheeses are perfect.

You also have to be careful not to overfill them.

If you follow all these recommendations, the rice paper sheets will hold up perfectly.

 

Combine the ingredients to your taste, fruits, vegetables, chicken, shrimp, everything fits in these delicious rolls.

 

These Vietnamese rolls also work very well as an appetizer, they are light and split in half they are small bites that can be served with other healthy appetizers.

But if you prefer, they can be a main dish accompanied by fried rice or salad.

The advantage over classic spring rolls is that they are not fried, so they are much easier to digest.

To accompany these Vietnamese spring rolls there are several options, the quickest is to dip them directly in soy sauce, if you have the possibility, buy a soy sauce with the lowest percentage of salt and sugars you can find.

The other option is to prepare a teriyaki sauce, I make it without using sugar or corn flour, it is very good and turns out to be less caloric.

I also like to make an oriental sauce made with soy, rice vinegar, orange juice, lemon juice, ginger and sesame seeds.

Ingredients
  

  • 6 hojas papel de arroz
  • 2 zanahorias ralladas
  • 1 taza col lombarda hervida
  • 1/2 aguacate
  • 12 gambas peladas y cocidas
  • 1/2 pechuga de pollo cocina y desmenuzada
  • 1 taza espinacas baby
  • 1 cogollo de lechuga
  • 50 gramos queso feta

Instructions
 

  • Lo primero es preparar todos los ingredientes. Cocina la pechuga de pollo en agua con unas verduritas, al menos durante 20 o 25 minutos, hay que conseguir que quede tierna para poder desmenuzarla.
  • Mientras hierve las gambitas en agua salada, sólo 1 minuto, retíralas y deja que se enfríen.
  • La col lombarda también me gusta escaldarla para que se ablande un poco, pon agua a hervir, añade sal y cocina la col entre 5 y 10 minutos, la queremos al dente, pero que no está tiesa. Córtala en juliana y reserva.
  • Ralla la zanahoria o córtala en tiras con un pelador. Reserva.
  • Prepara los cogollos de lechuga, lava las hojas y corta los troncos duros. Lava las espinacas y reserva.
  • Corta el aguacate a la mitad, retira el hueso, separa la carne de la piel con una cuchara y córtalo en tiras alargadas.
  • Cuando tengas preparados todos los ingredientes del relleno ya puedes hidratar las hojas y hacer los rollitos.
  • Pon agua en un plato o bandeja que tenga un poco de borde, hidrata cada hoja durante unos segundos, respeta el tiempo que marca el fabricante, si te pasas y las hidratas demasiado se pegarán y se romperán fácilmente.
  • Ve hidratando las hojas a medida que las vayas usando, ponlas sobre un paño limpio o directamente sobre un plato plano, coloca los ingredientes de forma ordenada, piensa que cuando los enrolles se verá el interior y la idea es que quede bonito.
  • Una vez colocados los ingredientes para hacer el rollito, dobla la hoja una vez sobre ellos y haz un pliegue hacia dentro en cada lado, sigue enrollando hasta que quede cerrado.
  • Haz lo mismo con todos, cuando los tengas guárdalos en la nevera hasta que los vayas a servir, es importante separarlos entre ellos con un papel de horno y taparlos con papel film o meterlos en un recipiente hermético para que no se resequen.
  • Cuando los sirvas puedes cortarlos a la mitad como hice yo o dejarlos enteros y acompañarlos de tu salsa favorita.
