sugar-free mango jelly

With just four ingredients, this refreshing treat is easy to prepare and perfect for healthy indulgence.

Agar Agar Mango Jelly Recipe
This sugar-free mango jelly is quick to prepare, requiring just four ingredients and minimal effort. It’s perfect for beginners or busy parents.
Ingredients (Serves 4)
  • 2 ripe mangos (about 400g), peeled and pureed (yields ~1.5 cups puree)
  • 1 cup water
  • 1 tbsp lemon juice
  • 5-7g agar agar powder (adjust based on acidity; use 7g for smoother texture)
  • Optional garnishes: Mango cubes, Greek yogurt (non-dairy for vegan), or cottage cheese
Instructions
  1. Puree the Mango: Blend mango flesh until smooth. For a silky texture, strain to remove any fibrous bits (especially for kids who dislike pulp).
  2. Prepare the Liquid: In a saucepan, combine mango puree, water, and lemon juice. Stir to mix evenly.
  3. Activate Agar Agar: Sprinkle agar agar powder over the mixture and let it sit for 5 minutes to hydrate. Heat over medium heat, stirring constantly, until the mixture is warm but not boiling (agar agar dissolves at ~85°C/185°F). Ensure it’s fully dissolved, about 2-3 minutes.
  4. Pour and Set: Pour the mixture into molds, ramekins, or a shallow dish. Let cool at room temperature for 10 minutes, then refrigerate for 1-2 hours until set.
  5. Serve: Unmold or slice the jelly. Garnish with mango cubes, a dollop of Greek yogurt, or cottage cheese for extra protein. Serve chilled.
Tips for Success
  • Adjust Agar Agar: Use 5g for sweet fruits like mango; increase to 7-10g for acidic fruits like oranges to ensure a firm set.
  • Seasonal Swap: In winter, try oranges or blood oranges for a vibrant twist (strain pulp for kids).
  • Smooth Texture: Strain fruit puree for a refined, kid-friendly consistency.
  • Storage: Store in the fridge for up to 3 days. Cover to prevent drying.
Seasonal Variation: Orange Jelly
In winter, swap mango for oranges to take advantage of seasonal produce. Squeeze fresh oranges (strain for smoothness), heat the juice gently, dissolve agar agar, and chill. Ripe oranges are naturally sweet, eliminating the need for sweeteners. Blood oranges add a stunning color but are more acidic, so use sweeter varieties for a balanced flavor. This variation is just as low-carb and refreshing, perfect for holiday gatherings.

Mango and agar agar deliver fiber, vitamins, and minerals, supporting digestion and overall wellness.

Why Agar Agar Shines

Unlike gelatin, it sets at room temperature and holds firm even in warm weather, making it ideal for summer. Its vegan, gluten-free, and low-calorie properties cater to diverse dietary needs, ensuring everyone can enjoy this dessert.
