The truth is that you can make many variations and they are all really tasty.

The Beetroot Hummus recipe that I propose for you today is based on cooked chickpeas and has beetroot as an extra ingredient.

The beetroot gives it sweetness, but above all, color. I love the result, it is very attractive and looks great on any appetizer table.

A nice idea is to prepare a classic one, exactly the same as this one, but without the beetroot, and another one with beetroot and serve them both together, the mix is great.

To prepare this Beetroot Hummus you only need chickpeas, beets, tahini (sesame paste), sesame seeds (optional), cumin, salt, lemon juice and water. To decorate the dish, a drizzle of extra olive oil and a pinch of sweet paprika.

It is very easy to make, just blend everything and serve, leave it in the fridge for a few hours before eating and it will taste even better.

 

To accompany this beetroot hummus, the healthiest option is crudités, a selection of raw vegetables.

Another option is to cut some carrot sticks, cucumber sticks and celery.

Veggie chips are also an option, I love them all, but if we want a healthier option, baking them is the best, we will need a good mandoline slicer to make the cuts correctly and make them thin.

We can cut zucchini into slices, tapioca, sweet potato, carrot, beetroot and bake them for hours at a low temperature, we will get them to dry and they will be perfect for dipping, without oils or frying.

When we avoid frying, meals are much more digestible and light, you reduce the calorie intake and they are much healthier.

Ingredients
  

  • 400 gramos garbanzos
  • 1 remolacha pequeña
  • 1/2 diente de ajo
  • 2 cda tahini
  • 1 cda zumo de limón
  • 1 cucharadita comino
  • 1 cucharadita sésamo
  • 1 pizca sal
  • 1/2 taza agua
  • aceite oliva virgen extra
  • 1 pizca pimentón dulce

Instructions
 

  • Lava los garbanzos con agua y mételos en tu robot de cocina. Para preparar este plato suelo usar una buena conserva, es lo más rápido y práctico. 
  • La remolacha puedes comprarla ya cocida, te ahorrarás el paso de hervirla, pero si la tienes fresca hiérvela en agua con sal durante 15-20 minutos, pínchala con una puntilla para ver que está tierna, sácala y deja que se enfríe. 
  • Parte la remolacha en trozos y añádela también al robot.
  • Añade el resto de ingredientes y la mitad del agua, el aceite de oliva y el pimentón resérvalos para la presentación del plato.
  • Opcionalmente puedes añadir un chorrito de aceite de oliva a la mezcla antes de triturar, le dará más untuosidad. A medida que vayas triturando en conjunto verás si necesitas echar el resto de agua o no. Tiene que quedar una crema suave, pero consistente.

Notes

 
  • Guarda siempre en la despensa conservas de legumbres ya cocidas, de esa manera podrás improvisar y preparar el hummus cuando se te ocurra. Si cueces tú los garbanzos tendrás que planificarlo la noche antes y tenerlos en remojo al menos 8 horas antes de cocerlos.
 
  • Si compras la remolacha ya cocida, suele venir en paquetes de 2 unidades, si te sobra una no la tires, congélala y úsala otro día, se conservará perfectamente.
 
  • El tahini es una pasta a base de semillas de sésamo molidas, para prepararlo en casa es necesario tener un robot de cocina muy potente, yo lo compro preparado en tiendas de productos árabes o en herbolarios, si es ecológico mejor que mejor.
 
  • Añade el agua por fases, controla la consistencia que adquiere la mezcla cuando la tritures y añade más si lo crees necesario.
