Hello everyone,

comforting cauliflower soup

You can prepare this delicious cauliflower soup in advance and store it in the refrigerator, heat it before serving and that’s it.

It is perfect for lunch and also for dinner, as a first course it can be accompanied by meat, fish or eggs, its mild flavor makes it combine well with everything.

Before starting with the recipe I would like to comment on the characteristics of this vegetable and why its consumption is so beneficial, how we can avoid the smell it gives off when cooking and why we should include it in our regular diet.

Cauliflower Soup is low in carbohydrates, with a high water content, therefore, low in calories.

What benefits does cauliflower bring to our health?

Cauliflower, known by its scientific name as Brassica oleracea var. botrytis, is a diuretic vegetable due to its high water content and low sodium content.

It is good for hypertension and fluid retention, as it increases urine production, it helps us eliminate not only liquids, but also other waste substances.

It is recommended for those who suffer from gout or have a tendency to develop kidney stones.

Cauliflower is composed mainly of water and has very few calories because it is low in carbohydrates, proteins and fats, therefore its consumption is suitable in low carb diets.

Good source of fiber and some vitamins such as vitamin B6, B5 and folic acid.

As for minerals, it is a source of potassium and phosphorus.

As a counterpoint, it must be said that it causes flatulence, although it does not affect everyone equally, for example it does not happen to me, I assure you!.

It can be a little difficult to digest for some people with gastritis or digestive problems, this is due to its sulfur content, but these are specific cases, in general it is easily digested and provides that feeling of well-being that I spoke about at the beginning.

Prepare the cauliflower cream in advance and serve it when you need it. Make your daily life easier.

How to avoid the cauliflower smell?

When we cook cauliflower at home, everyone knows that it gives off a strong smell that usually stays in the air for a few hours, there are many tricks out there to avoid it.

I’ll be honest, avoiding it completely is impossible, but we can reduce it.

One way to do it is by adding onion to the cooking and another by adding milk, well, with this recipe we are saved, because both ingredients accompany the cauliflower in the preparation of this delicious cream and I assure you that it does not smell.

If despite everything you still notice its aroma after a few hours, the solution is very easy… open the windows!

Why should we eat cauliflower?

The main reason is the nutrients it provides and the benefits it has for our health, the second reason is its low calorie and its diuretic power, and the third is its high fiber content and its low carbohydrate content.

But there is another reason that makes it a leading ingredient, its versatility, there are many ways to prepare it and below I am going to give you some ideas.

There are many ways to prepare cauliflower, steamed leaving it al dente or grated, in the form of rice.

How to cook cauliflower

You love eating rice, but you don’t want to overindulge or you are simply controlling the carbohydrates in your diet, the solution is very simple, cauliflower! By grating it you can prepare a magnificent cauliflower rice that you can serve as a garnish or as the base of a dish that you would normally prepare with rice.

You like boiling vegetables at night, it makes you feel good and has a power purifying that makes you very happy in the morningNext, add cauliflower to your winter stews; the amount of fiber it contains will further improve the recipe.

Steamed vegetables at their peak, that is, crunchy, fascinate you, so cauliflower can be part of that team; as you know, its properties are better maintained with short cooking times.

You usually prepare healthy appetizers, and crudités are never missing from them. So don’t forget to include cauliflower. Separate the florets into small bouquets and serve them as is, dip them in your favorite sauce; you’ll love it.

A warm soup is always welcome during the cold months; it’s one of the simplest and tastiest ways to have something hot, and it’s perfect as a first course. Take note and try this one.

Prepare a thick cauliflower cream and use it to replace a bechamel, make your recipes lighter!

Other uses for cauliflower cream

If we prepare the cauliflower cream by reducing the amount of broth we add to the recipe to get a thicker cream, we can use it in other preparations, for example to replace a bechamel in another preparation, taking into account that it does not contain flour, it would be a great way to reduce calories and carbohydrates in a moussaka or even in a lasagna.

If you decide on this option, I recommend that you add white pepper to the cream and give it a good point of nutmeg, you will make it even more similar to a traditional bechamel (if you consume dairy products you can also add a little shredded parmesan).

In addition, this cream can be the base when plating other preparations, whether meat or fish, I have many ideas, a good hake loin, a chicken breast or a pork tenderloin, some poached eggs or steamed salmon, all of them would be very good on a base of cauliflower cream.

  • 4 cucharadas de aceite de oliva virgen extra AOVE

Instructions
