
Eggplant Dip (Baba Ganoush)
This eggplant dip is always on my list of healthy appetizers. It’s part of a large collection of recipes with eggplant and is known all over the world.
I have to confess that I really like appetizers. They are usually eaten before the main meal and they always catch me feeling hungry.
It is usually a moment of weakness in which we have to use self-control techniques to avoid ending up eating and drinking everything that is put in front of us.
That is precisely why I really like preparing healthy appetizers and snacks that are light, low in carbohydrates and low in calories.
To make healthy appetizers will help you avoiding to loose control.
A dish that meets all these characteristics is this eggplant dip, better known as baba ganoush, is a vegan recipe of Arabic origin and consists of an eggplant puree seasoned with spices.
It is very tasty and can be dipped with raw vegetables, with vegetable chips or with classic pita bread (if you want your appetizer to be light, choose crudités).
The texture is smooth and its flavor is intense thanks to the tahini (sesame paste), cumin and garlic, the lemon juice adds a point of acidity that gives it a lot of freshness.
You can present it as an appetizer along with other healthy dips and bites, your guests will love it.
The most important thing to me is that it is very light and will not fill you up too much or leave you feeling heavy.
Serve it cold and you will see how much flavor.
This is one of the most famous eggplant recipes that exist, it is of Arab origin, but it is known throughout the world.
Health benefits of eggplant:
Eggplant is a vegetable whose main component is water, it contains few vitamins, few carbohydrates and small amounts of some minerals such as phosphorus, calcium, magnesium and iron, although it is richer in potassium. It also contains vitamins A, B1, B2, B3, C and folates. One of its advantages is that since it is mostly made up of water and the rest is fiber, it turns out to be very low in calories.
Preparation of the eggplant dip:
To prepare this recipe you need very few ingredients:
- Eggplants
- Tahini
- Cumin
- Sesame seeds
- Garlic
- Lemon juice
- Salt
Bake the eggplants and let it cool, separate the meat from the skin, mix it with the rest of the ingredients and blend it in your food processor.
You don’t want a cream, a rustic puree will be better, if you notice any ingredient it’s okay.
You know what?, The traditional baba ganoush is mashed by hand and its texture should not be so smooth.
Season with extra virgin olive oil, some sesame seeds and a little parsley, keep it in the fridge and serve it cold.

Dip de berenjena (Baba Ganoush)
Ingredients
- 2 berenjenas
- 1 cda tahini pasta de sésamo
- 1/2 cucharadita comino
- 1/2 cucharadita semillas de sésamo
- 1/2 cucharadita sal marina
- 1/2 limón solo el zumo
- 1 ajo
- 1 cda aceite de oliva virgen para decorar
Instructions
- Hornea las berenjenas, a 180ºC durante 40 minutos
- Deja que se templen y separa la carne de la piel, con una cuchara lo conseguirás fácilmente.
- Introduce en tu robot de cocina todos los ingredientes, excepto el aceite de oliva.
- Tritura todo, pero no demasiado, ve dándole poco a poco, hasta que veas que los ingredientes están picados, pero no hace falta que sea una crema demasiado fina. Es mejor que quede como un puré un tanto rústico.
- Guárdalo en la nevera un rato antes de servirlo, reposado estará más sabroso.
- Sírvelo en un bol, un cuenco o un plato hondo y decóralo con aceite de oliva virgen extra y unas hojitas de perejil. ¡Que lo disfrutes!
