Today I come with a basic, an express homemade ketchup, healthy and easy to prepare, it has few ingredients and you can also adapt it to your tastes.

Ketchup casero
Ingredients
- 170 gr pasta de tomate concentrado*
- 1/2 cda (tbsp) vinagre de sidra* también puedes usar vinagre de manzana
- 2 cda (tbsp) agua
- 1 cucharadita (tsp) mostaza de dijon
- 1/4 cucharadita (tsp) sal
- 1/4 cucharadita (tsp) pimienta* usa una mezcla de pimientas o la que más te guste
- 1/4 cucharadita (tsp) ajo en polvo
- 1/4 cucharadita (tsp) orégano* puedes variar la mezcla de especias
- 1 cda (tbsp) azúcar de abedul*
Instructions
- En una olla pequeña cocina el tomate concentrado con el agua y las especias durante 20 minutos aproximadamente.
- A los 15 minutos de cocción añade el vinagre, después de 5 minutos retira del fuego y añade la mostaza y edulcorante, mezclalo bien.
- Deja que se enfríe a temperatura ambiente y prueba, añade sal o pimienta si crees que es necesario.
- Guárdalo en un bote de cristal, tápalo bien y al frigorífico. Cuando esté frío y reposado estará mucho mejor y podrás apreciar los distintos sabores.
Notes
- Puedes usar pasta de tomate concentrada o usar una lata de tomate natural triturado y reducirlo tú mismo, en ese caso tardarás más tiempo, pero te quedará riquísimo.
- El vinagre de sidra de manzana no se vende en todas las tiendas, si no dispones de él usa vinagre de manzana.
- Puedes experimentar con las especias, la canela y el clavo le van muy bien.
- En cuanto al edulcorante tienes varias opciones, para hacer ketchup casero se suele usar miel, pero yo no puedo consumirla así que he usado el xilitol (azúcar de abedul), también puedes usar azúcar de coco, que no sabe a coco, tiene sabor a caramelo y su índice glucémico es bajo.
