  • 100 gramos almendras crudas con piel o sin piel
  • 150 gramos zanahorias (2 unidades grandes)
  • 1 cda semillas de lino
  • 120 ml agua (son 8 cda o 1/2 taza))
  • 1/4 cucharadita canela molida
  • 1/4 cucharadita jengibre molido
  • vainilla natural (1/2 vaina, solo las semillas)
  • 1 cda uvas pasas
  • 2 onzas chocolate negro (85-92%), (opcional)
  • 1 cda edulcorante acalórico (es opcional, yo recomiendo usar eritritol)

Instructions
 

  • Pon en remojo las almendras crudas, al menos durante 4 horas, este paso es importante para activarlas.
  • Pasado ese tiempo ya puedes empezar a elaborar la masa del bizcocho.
  • Escurre las almendras y añádelas a tu robot de cocina.
  • Pela las zanahorias, córtalas en trozos grandes y añádelas también al robot.
  • Añade el agua, las semillas de lino y las especias.
  • Tritura bien, será necesario que lo hagas en diferentes fases, para que quede bien homogéneo.
  • Precalienta el horno a 200ºC
  • Pon la masa en el molde que hayas elegido, puedes hacer pequeñas porciones o usar un molde grande. Yo me decanté por hornearlo en porciones. También puedes hacer galletas.
  • Hornea durante 25 minutos aproximadamente a 180ºC, dependiendo del horno puede que necesites 5 minutos más.
  • Deja enfriar y sirve.
