SORBETE DE LIMÓN Y COCO, SOLO 3 INGREDIENTES

Ingredients
  

  • 1/2 taza zumo de limón recien exprimido y colado (100 ml aproximadamente, corresponde a 2-3 limones dependiendo de su tamaño)
  • 1 taza leche de coco orgánica (200 ml aproximadamente)
  • 2 cda polvo de dátiles secos* (30 gramos)
  • hojas de menta fresca

Instructions
 

  • Exprime el zumo de 2 o 3 limones y cuélalo para eliminar la pulpa.
  • En un recipiente apto para el congelador, preferentemente de vidrio, mezcla el zumo, la leche de coco y el polvo de dátiles o el edulcorante que prefieras.
  • Ralla 1/4 de la cáscara de un limón y añádela también a la mezcla. Recuerda no rallar la parte blanca porque amarga mucho.
  • Mezcla bien con unas varillas y prueba. Si crees que está muy ácido, añade más edulcorante, si por el contrario piensas que necesita más limón añade un poco más.
  • Mete en el congelador la mezcla y sácala cada hora para removerla con un tenedor e ir rompiendo los cristales de hielo que se van formando. Cuando tenga suficiente consistencia, al cabo de unas 4 horas, ya podrás servirlo.
    Si tienes una máquina heladera, será mucho más fácil, echas la mezcla y en unos minutos lo tendrás listo.

Notes

*Puedes sustituir el polvo de dátiles secos por otras opciones también naturales, como el azúcar de coco, la lúcuma o el sirope de ágave.
*Si quieres usar un edulcorante que no afecte a tus niveles de glucemia en sangre, te aconsejo que uses estevia, pero si su regusto te molesta, usa eritritol o xilitol, que no dejan sabor.
*Para que te hagas una idea, la ración (75 Kcal) corresponde con una bola de helado mediana.
