I really like red lentils, for many reasons, starting with their flavor, continuing with their texture and ending with their excellent nutritional properties.

I recently explained to you in this post, how to make a red lentil stir-fry with leek and some spices, today I bring you a very similar recipe, but with a few more ingredients.

On the one hand, the red lentil stir-fry, this time with onion and carrot, and with 3 seasonings that give it a spectacular flavor, curry (a mix of spices), turmeric (intense color and anti-inflammatory effect) and garlic powder.

On the other hand, the Halloumi cheese the grill and a base of lamb’s lettuce that add a lot of freshness to the dish.

The truth is that the result is very good and considering how easy it is to prepare, it is worth trying.

As for the red lentils, I can tell you that they have a low GI, it varies between 21 and 30 depending on the variety. Halloumi cheese is originally from Cyprus, it is a unique product, it is very firm and can be prepared on the grill or on the griddle, curious, right?

It is a cheese rich in protein, with fat, but very low in carbohydrates, if you cook it on the griddle, you will see how the surface is slightly toasted, but it remains firm and does not melt.

When preserved in brine, it has a somewhat salty but very pleasant flavor and is derived from the mixture of three types of milk, cow, goat and sheep. Although originally it was made only with goat and sheep milk. Cow’s milk was added later to reduce costs.

Currently, the most artisanal versions are made with more goat and sheep milk, while the more industrial ones usually contain more cow’s milk.

 

Halloumi is a very firm Cypriot cheese, it can be grilled and it doesn’t melt.

 

Originally from Cyprus, it is also the star of many dishes in Middle Eastern cuisine and is usually consumed both cooked and fresh.

As I have already mentioned, it is preserved in brine and usually contains mint leaves that were traditionally added for their bactericidal power.

All I can tell you is to look for a quality Halloumi in Spain You can find several brands, make sure it is made with at least the three types of milk I mentioned (cow, goat and sheep), and check the nutritional values ​​to see that they are correct.

I advise you to prepare it on the grill, over high heat, with a few drops of oil, turning it over and over, you will see how that crispy layer forms on the surface and how delicious it is. You’ll love it!

Preparing this red lentil dish with Halloumi will not take you more than 30 minutes, you may think it is complicated, I assure you it is not, it is as easy as making a stir-fry and prepare the grilled cheese before serving it.

The grace of this dish is in the use of a mixture of spices that in addition to flavor, provides many nutritional benefits, a delicious curry, Turmeric powder and garlic is all you need.

Red lentils are skinless, so they cook in 15 minutes, and they don’t need to be soaked beforehand, which means there’s no chance of forgetting and you can decide to make them at any time.

Ingredients
  

  • 1/3 taza lentejas rojas de cultivo ecológico
  • 100 g cebolla
  • 75 g zanahoria
  • 1/2 cdita curry en polvo (mezcla de especias)
  • 1/2 cdita cúrcuma en polvo
  • 1/4 cdita ajo en polvo
  • 1 cda aceite de oliva (también puedes usar aceite de coco)
  • 1/2 taza caldo de verduras o pollo
  • 200 g halloumi

Instructions
 

  • El primer paso es cortar la cebolla y la zanahoria en juliana y en palitos, respectivamente.

  • Después hay que pochar la cebolla con aceite de oliva y un poco más tarde añadir los palitos de zanahoria.
  • Añadir las especiar y darle unas vueltas, sin que se quemen.
  • Ahora ya puedes poner las lentejas, sube el fuego y añade el caldo.

  • Deja cocer durante 10-15 minutos, no te pases para que las lentejas no se deshagan, apaga el fuego y reserva
  • Corta el Halloumi en lonchas no muy finas.
  • Calienta una sartén y añade unas gotas de aceite, cuando esté bien caliente añade los trozos de queso y dora por ambos lados.

  • En un plato pon unos canónigos o las hojas verdes que más te gusten y aliña con un poquito de aceite de oliva. Con un molde pon encima las lentejas salteadas y añade el Halloumi alrededor. Te encantará.
