Ingredients
  

Para la base de la tarta:

  • 3 huevos camperos
  • 1 y 3/4 taza zanahoria picada
  • 1 taza almendra molida
  • 2 cda azúcar de abedul (xilitol)
  • 2 onzas chocolate negro 85%
  • 1/4 cucharadita jengibre en polvo
  • 1/4 cucharadita canela en polvo
  • 1/4 cucharadita nuez moscada en polvo

Para el frosting:

  • 1/2 taza yogourt griego (125 gr aproximadamente)
  • 1/4 taza queso crema
  • 1 cda azúcar de abedul (xilitol)

Decoración:

  • 1 zanahoria pequeña
  • 1 cucharadita azúcar de abedul (xilitol)

Instructions
 

  • Lo primero que hay que hacer es encender el horno, precalentar a 200ºC al menos 10 minutos.
  • En un bol mediano bate los huevos, añade el xilitol y mezcla bien.
  • Por otro lado, lava y pela las zanahorias, trocéalas y mételas en la picadora. Cuanto más finas queden, más suave quedará la masa de la tarta.
  • Añade la zanahoria, las especias y la almendra molida a los huevos que ya tienes batidos, intenta que se integre todo muy bien, por último echa el chocolate troceado, yo lo hago a mano, los trozos quedan irregulares, pero no importa. ¡Me encanta encontrarlos en cada mordisco!.
  • Forra un molde con papel de horno o úntalo bien con mantequilla. Yo he usado un molde redondo de 17 cm, entre 15 y 18 cm es adecuado para esta receta. Recuerda que cuanto más grande sea el diámetro más fina te quedará la tarta. Echa la masa en el molde y dale unos golpes para que se asiente bien.
  • Hornea la tarta a 180ºC durante 30 minutos. Al terminar comprueba que esté bien cocida introduciendo un palillo en distintas zonas, si sale limpio, ya la tienes.
  • Deja enfriar fuera del horno unos 10-15 minutos, sácala del molde y guárdala en la nevera.
  • Mientras la tarta se enfría y adquiere consistencia vamos a prepara el frosting. En un bol mezcla un yogourt griego y 1/4 de taza de queso crema, añade una cucharada (tbsp) de azúcar de abedul, bátelo bien y deja que enfríe un rato en la nevera, de esa forma adquirirá consistencia y será más fácil decorar la tarta.
  • Para adornar, ralla media zanahoria y cocínala en una sartén con un poco de azúcar de abedul y un chorrito de agua, la zanahoria se caramelizará un poco, quedará medio cocinada y dulce, al masticarla aún mantendrá su textura un poco crujiente. Deja que se enfríe.
  • Saca la tarta de la nevera, ponla en un plato bonito o en una bandeja con pié, reparte el frosting por la superficie, trata de crear una capa uniforme. Decora con la zanahoria rallada y caramelizada.

Notes

 
  • En la entrada puedes ver que he preparado dos versiones, una con un frosting de yogur griego y la otra con una cobertura de chocolate (ganache), la masa de la tarta es la misma en ambas, simplemente usé moldes diferentes, uno redondo (17cm) y el otro rectangular (20x14cm).
 
  • La decoración es muy sencilla en ambos casos: Zanahoria rallada ligeramente caramelizada con azúcar de abedul y zanahoria cortada con un "sacapuntas" para verduras, (en este caso la zanahoria está cruda).
 
  • Si quieres evitar los lácteos en esta receta, sirve la tarta con una salsa de chocolate negro fundido, también puedes preparar crema de coco batida, que combinará a la perfección con el sabor suave de la tarta.
 
  • Es muy importante que la mezcla de las tres especias sea equilibrada, si te pasas con alguna de ellas, puedes arruinar el resultado final. Mi consejo es que pongas la misma cantidad de canela y nuez moscada, y 1/3 de esa cantidad de jengibre.

  • 1/4 taza nata para montar 60 ml aproximadamente
  • 60 gramos chocolate negro 85% 6 onzas
  • 10 gramos mantequilla
  • 1 cda agua

Instructions
 

  • En un cazo pon la nata a calentar, cuando empiece a hervir retírala del fuego.
  • Añade el chocolate y la mantequilla, deja que se derrita y mezcla bien.
  • Añade la cucharada de agua y mezcla.
  • Pon la tarta sobre una rejilla y echa la cobertura por encima de manera uniforme para que cubra toda la superficie. Deja enfríar.
