Let’s start by seeing what a crumble is. Surely most of you have heard of this type of dish, but you associate it with a sweet recipe, a dessert, and a crumble is a cake of Anglo-Saxon origin, it consists of a fruit base with a crunchy layer on top made with flour, butter and sugar.

The structure of this recipe is what inspired me when making the salmon crumble that I propose, my crumble is salty and its main ingredient is wild salmon along with vegetables, for the crunchy layer instead of using common flour, butter and sugar, I have used my flourless seed crackers.

As they are made from almond flour, almonds and seeds, they give it a crunchy touch, but do not add heaviness to the set nor an excess of calories and the combination of flavors is excellent, I assure you.

This flourless salmon crumble works very well as a main course and is a good option for both lunch and dinner, it is very easy to digest and is low in carbohydrates.

A consommé, a fish soup or a cream, such as cauliflower soup, are good options to have as a first course before the crumble and you would already have a complete, light and healthy menu. A good salad would also go very well, as this one.

In this recipe I have used wild Alaskan salmon which has a milder flavor and does not give off as strong an odor as wild salmon farmed fish.

As for the differences between the two, wild salmon contains more Omega 3 fatty acids, whereas farmed salmon, despite also containing Omega 3, contains many more Omega 6 fatty acids, which are not as beneficial for our health.

Our diet should provide us with a similar amount of both polyunsaturated fats (Omega 3 and Omega 6), but what usually happens is that we consume many more Omega 6 fatty acids, which are not as beneficial, which is why we should boost our consumption of Omega 3 through our diet.

Preparing the flourless salmon crumble is very simple, you just have to cook the ingredients separately to ensure that they are all just right and then assemble the whole thing at the time of serving.

If you have guests or are simply going to spend the morning out of the house, you can leave the salmon cooked, and the vegetables sautéed, when you arrive you just have to heat it a little and assemble the dish, if you do it as I explain below I assure you that the presentation will be spectacular and very appetizing.

Keep in mind that many times we do not pay attention to how to serve the food and generally doing it in an orderly way following an aesthetic criterion makes a difference, it is not necessary that you do it only when you have guests, do it also in your day to day, for your family and for yourself, the more beautiful the dish is, the more pleasant it will be to eat it, that sure.

When everything is in place, carefully remove the ring and arrange the ingredients in layers. The whole thing looks much more attractive than placing the salmon with the vegetables on the side and sprinkling the muesli on top.

Ingredients
  

  • 200 g salmón salvaje* 2 lomos
  • 1 calabacín
  • 1 cebolla
  • 1/2 limón
  • 2 galletas saladas de semillas
  • sal marina
  • pimienta molida
  • 3 cda aceite oliva virgen extra

Instructions
 

  • El primer paso para elaborar esta receta es pochar las verduras. Cortamos la cebolla en juliana y el calabacín en rodajas finas, añadimos aceite de oliva en una sartén y empezamos con la cebolla, la dejamos sofreír durante 15 minutos, calor medio-bajo, intenta que no oscurezca demasiado, cuando veamos que está transparente la reservamos.
  • Mientras las verduras se hacen, precalentamos en horno a 200ºC
  • En la misma sartén donde has pochado la cebolla añade un poco más de aceite de oliva y cuando esté caliente, el calabacín, sazónalo, le das unas vueltas y lo dejas cocinar unos 10 minutos más, cuando veas que está blandito, resérvalo.
  • Prepara una fuente para horno, echa aceite de oliva en la base, pon los lomos de salmón, añade un chorrito de agua y el jugo de medio limón, sazona el salmón y añade pimienta. Hornea* durante 10 minutos aproximadamente, el tiempo de cocción dependerá de la potencia de tu horno. El objetivo es que el pescado no se reseque, así que más vale echarle un ojo antes de que se pase y si aún está crudo dejarlo más tiempo.
  • Deshaz el salmón en lascas, procura no desmenuzarlo demasiado, sería una pena, separar las lascas es fácil cuando está cocinado y te resultará más cómodo montar el plato ya que cada lasca es una superficie plana y se mantendrá mejor, además cuando el conjunto esté acabado se verán los trozos de pescado, siempre interesa que el producto sea reconocible, así se aprecia la calidad de lo que te estás comiendo.
  • Para el crujiente desmenuza unas galletas saladas de semillas* y resérvalas.
  • Es el momento de montar el plato, elige un plato llano que sea bonito, sitúa el aro para emplatar en el centro, empieza poniendo una capa de calabacín, coloca las rodajas ordenadamente de manera que cubran toda la superficie comprendida dentro del aro, después una capa de cebolla y sobre ella una de salmón, repite la operación.
  • Ahora solo queda la última capa, el crujiente, añade el muesli* salado por encima.
  • Ha llegado el momento de retirar el aro, no te preocupes si parte de muesli cae sobre la superficie del plato, formará parte de la decoración final.
  • Ya solo queda acabar de decorar el plato, unas gotas de aceite de oliva virgen extra y un poco de mezcla de pimientas molida será suficiente. Pero tienes muchas más opciones, si te gusta el eneldo pica un poco y añádelo, también puedes preparar alguna mayonesa, por ejemplo una con perejil para darle un toque de color o se me ocurre que un poco de salsa tártara le iría también muy bien. Son solo propuestas, elige la opción que más te guste.

Notes

  • El salmón salvaje lo compré congelado, para prepararlo lo saqué la noche antes del congelador y lo dejé en la parte alta del frigorífico, es importante que se descongele poco a poco, de esa forma está en óptimas condiciones a la hora de usarlo. Si tienes la opción de comprarlo fresco mejor que mejor.
  • Cuando cocines el salmón en el horno puedes tapar la fuente con un papel de aluminio para que no se seque la superficie del pescado y quede más jugoso.
  • Para el crujiente he usado mis galletas saladas de semillas sin harina desmenuzadas, pero también puedes mezclar unos cuantos frutos secos y semillas al natural y tostarlos un poco en una sartén, de esta manera la capa crujiente no tendrá tanta consistencia, pero quedará rico.
  • Si quieres que el muesli esté más crujiente puedes darle un toque de grill al plato en el último momento, pero hazlo antes de retirar el aro y durante muy poco tiempo, este paso no es necesario, yo no lo suelo hacer y el resultado es muy bueno.
