In this post I want you to see how easy it is to make sugar-free lemon cream, a delicious cream that you can use to make your own version of the classic lemon tart or that you can have accompanied by some red fruits enjoying all its flavor.

And the English lemon cream, better known as lemon curd, is a delicacy, and although it is most common for it to be part of a lemon pie, you can prepare it and make it the star of your dessert or to accompany other preparations.

 

To sweeten this sugar-free lemon cream I have used erythritol, a healthy option that will not affect your blood glucose.

 

I declare myself an unconditional fan of this cream, it is superior to me, I am able to eat it by the spoonful without anything else, without adding anything and without accompanying it with anything, simply savoring the lemon and enjoying its silky texture.

I am going to explain how to make a sugar-free lemon cream, using a non-caloric sweetener that has no effects on blood glucose, I am referring to erythritol.

The advantage of erythritol is that it does not leave an aftertaste in the food and if you do not exceed the recommended amount, which I never do in my recipes, it has no side effects.

It may happen that if it is abused, it has laxative effects in some people, especially children, but in the appropriate dose there is no problem.

Its main advantage is that it is absorbed in the small intestine, but is not metabolized, so it has no effects on blood glucose levels, which is very favorable for diabetics. If you want to know more, read this post.

I like to make it clear that sweeteners should be taken in moderation, because we are not interested in our body getting used to sweets and, even avoiding sugar and traditional sweets, continuing to be dependent on them.

 

The use of sweeteners should be moderate, and only in those recipes that require it.

 

This lemon cream can be consumed as is, if you accompany it with some red fruits you will love it, it combines very well with blueberries, but you can also use it to make a cake or some individual tarts.

It is common for desserts prepared with lemon to contain large amounts of sugar, it is quite logical, lemon is very acidic and to compensate for it, they are sweetened more than necessary.

As I have told you many times, I do not like desserts that are too sweet, my sweetness threshold is lower than most people’s.

What does this mean? That I really enjoy not-so-sweet foods, you don’t get to that point overnight, it’s a matter of getting used to it.

This sugar-free lemon cream can be used to prepare your own version of the classic lemon pie, lighter, sugar-free, without refined wheat flour and with a homemade meringue.

You can Serve it in a small glass, first putting a base of crumble, then the lemon cream and on top the meringue.

You can use the recipe for the crumble that I made with strawberries, it works perfectly, or prepare some sugar-free butter cookies like these, break them up and put them in the base.

The traditional lemon tart has a shortcrust pastry base, lemon cream and a meringue on top, with my recipe, the dessert will be lighter.

 

Sugar-free lemon cream has a sour touch that combines very well with the meringue.

 

The crumble that I propose is made from nuts, it does not have flour, it has seeds and some oat flakes, but they are optional.

The meringue is madewith egg whites and sweetened with an erythritol-based syrup, a very small amount, just enough to give it flavor. Learn how to prepare it by reading this post.

The cream is basically egg, lemon, and a thickener. I used a tablespoon of tapioca starch and a little bit of agar agar, which gave it texture without the recipe having gluten.

If you also use erythritol, you greatly reduce the glycemic load of the cream and you will notice that it feels much better.

 

Making it is very easy, it requires few ingredients and they are easy to get

 

The preparation process is simple and fast, it’s like a pastry cream, but instead of milk, it has lemon juice, with eggs being the base ingredient, you can see them in the following image.

Benefits of eggs for our health:

  • Its proteins are of high biological value*1, in fact, the protein with the highest proven biological value is that of the egg.
  • The egg contains all the essential amino acids, which our body is not able to synthesize and we must necessarily provide through the diet.
  • Being a food of animal origin, it is low in saturated fats. In addition, the ratio between saturated and unsaturated fats is convenient.

 

Why I like this recipe so much:

  • The base food is the egg, a food that provides us with many benefits.
  • Lemon is a citrus fruit rich in vitamin C and provides minerals such as magnesium, potassium, selenium and iron.
  • Since it contains tapioca starch, it does not contain gluten, so it is suitable for celiacs and those intolerant.
  • It keeps well for up to a week if well refrigerated, and can also be frozen without losing its organoleptic properties (flavor, color and texture).
  • It can be eaten as is or it can be used to prepare other desserts, for example a lemon tart healthy.

Ingredients
  

  • 120 g huevo (2 huevos M)
  • 100 ml zumo de limón recién exprimido
  • 2 cda eritritol
  • 1/2 cda almidón de tapioca
  • 1/2 cucharadita agar agar
  • ralladura de la piel del limón

Instructions
 

  • Pon todos los ingredientes en un cazo, mezcla todo muy bien con unas varillas, sin encender el fuego.

  • Cuando esté todo bien batido, enciende el fuego medio-bajo y cocina hasta que espese, tardará unos 4 o 5 minutos, no dejes de batir con las varillas en ningún momento y mantén siempre el fuego suave, no dejes que se pegue.

  • Cuando haya espesado, pon la crema en un recipiente de vidrio y deja que enfríe, puedes usarla en otras preparaciones, como una tarta de limón, o tomarla así, acompañada de unos arándanos, está deliciosa.

Notes

  • Si quieres hacer más cantidad, calcula que por cada huevo debes poner 50 ml de zumo de limón y 1 cda de eritritol. En cuanto al almidón de tapioca (también sirve la maizena), y el agar agar, la cantidad no debe aumentar siguiendo el mismo patrón, te pongo un ejemplo: Puedes poner 3 huevos, 150 ml del zumo de limón y 3 cda de eritritol, con la misma cantidad de almidón y agar agar, y la mezcla espesará igual. Si quisieras hacer más cantidad, ya deberías ir aumentando también esos dos ingredientes.
 
  • El dulzor de esta receta va a depender de tus gustos, como ya te he dicho, a mi me gusta mucho el sabor ácido, pero puede que tú quieras una crema más dulce, en ese caso deberás aumentar la cantidad de edulcorante o elegir otro, como por ejemplo el eritritol mezclado con esteviol,  que tiene un poder edulcorante muy superior y necesitarías poner mucha menos cantidad. (En los envases vienen las equivalencias para poder hacer los cálculos).
 
  • Esta crema de limón se puede congelar, y no pierde sus propiedades organolépticas, (color, sabor, textura), es una forma de tenerla siempre lista por si quieres improvisar algún postre y también una manera de no echarla a perder si la has hecho y resulta que no la vas a poder consumir.
