Ingredients
  

  • 2 cda aceite de oliva virgen extra
  • 2 dientes de ajo
  • 1 cebolleta
  • 1 pizca sal marina
  • 1 pizca pimienta negra
  • 5 zanahorias medianas
  • 3 tazas caldo verdura casero
  • agua filtrada
  • 1 naranja
  • 1 cda jengibre en polvo
  • ralladura de naranja
  • 1 taza yogourt griego o crema fresca* (opcional)
  • una ramita de tomillo

Instructions
 

  • En una olla mediana sofríe los ajos y la cebolla cortada en juliana, añade sal y pimienta.
  • Añade las zanahorias y dales unas vueltas, echa el caldo de verdura y el agua, cuando hierva deja cocer durante 10 minutos.
  • Raspa la piel de la naranja y reserva la ralladura para más tarde. Pela y corta la naranja, añádela a la olla.
  • Es el momento de echar el jengibre, deja cocer 10 minutos más.
  • Cuando la zanahoria esté blandita, añade la ralladura de naranja y tritura todo muy bien.
  • Sirve la crema templada, y si quieres añade una cucharada de yogur griego o de crema fresca para decorar, unas gotas de AOVE y tomillo fresco. Si la preparas de un día para otro, sírvela muy fría, como aperitivo o entrante es perfecta.

Notes

  • Si no tomas lácteos evita el yogur y la crema fresca. Adorna la crema de zanahoria con unas gotas de AOVE y el tomillo fresco.
 
  • Si no tienes caldo de verduras a mano puedes usar solo agua, también estará sabrosa.
 
  • Sirve esta crema de zanahoria y naranja como aperitivo, como primer plato o para una cena ligera.
