Ingredients
  

  • 100 g Cebolla cortada en juliana
  • 100 g Zanahorias cortadas en rodajas finas
  • 2 Dientes de ajo enteros
  • 100 g Puerro cortado en aros
  • 500 g Solomillos de pollo cortados en dados iguales
  • 250 g Champiñones laminados
  • 1 cda Salsa de tomate O 1/2 cda de pasta de tomate
  • 400 ml Caldo de pollo o de carne Si es casero mejor, si no tienes, usa uno comercial bajo en sal.
  • 200 g Espinacas
  • 1 cda aceite de oliva
  • 1 cdita sal marina
  • pimienta recién molida

Instructions
 

  • Cortar las verduras y disponerlas en la olla por capas en el siguiente orden: cebolla, zanahoria, ajos, puerro, salsa de tomate, el pollo y los champiñones.
  • Después añadir el caldo y dejar cocer durante 3 horas, la primera hora en calor alto, las otras 2 en posición calor bajo.
  • Por último, añade las espinacas, y deja cocer una hora más.
  • Servir la sopa en boles y disfrutar del sabor y de un plato muy reconfortante.

Notes

  • Muy importante: Si no tienes una olla de cocción lenta, puedes hacer esta sopa en una olla convencional, llevar a ebullición y bajar el fuego al mínimo, para que haga "chup-chup" y dejar cocer durante una o dos horas. Con este método necesitarás menos tiempo. 
 
  • Si preparas esta receta con el método tradicional, puedes sofreír la cebolla, los ajos, el puerro y la salsa de tomate, después añadir el pollo, los champiñones y por último, las espinacas, se cuecen en unos pocos minutos.
