Easy Beef Stew Recipe: A Comforting, Low-Carb Dish Inspired by The Hateful Eight
When I heard about the latest Cookpad challenge, “Movie Recipes,” I couldn’t resist participating as a recipe enthusiast! The challenge inspired me to recreate a dish from one of my favorite films, The Hateful Eight by Quentin Tarantino—a hearty beef stew that plays a starring role in a memorable scene. In the movie, a group of characters, including a bounty hunter, a fugitive, and a sheriff, find themselves snowed in at a remote stagecoach stop, where they’re served steaming bowls of stew to combat the icy cold. As a nutritionist, I’ve put my spin on this Easy Beef Stew, making it a low-carb, gluten-free dish that’s perfect for winter days or whenever you need a comforting, homemade meal. Let’s dive into the recipe, explore the nutritional benefits of beef and vegetables, and learn how to make this flavorful stew that’s as satisfying as it is healthy!

Easy Beef Stew Recipe Inspired by The Hateful Eight
This recipe creates a rich, savory beef stew that’s quick to prepare, especially if you use a pressure cooker, and perfect for winter nights. The beef provides hearty protein, while the vegetables add flavor and nutrition, keeping the dish low-carb by focusing on carrots and peas (with optional potatoes for those who want more carbs).
Ingredients (Serves 4)
Stew Base
-
1 lb (450g) beef (rump, cheek, or another tender cut, cubed)
-
1 medium onion (finely chopped)
-
2 medium carrots (sliced)
-
½ cup (75g) peas (fresh or frozen)
-
2 garlic cloves (minced)
-
2 cups (480ml) low-sodium beef broth (or water)
-
1 tbsp olive oil
-
1 tsp sea salt
Spices
-
1 tsp black peppercorns (or ½ tsp ground black pepper)
-
1 small chili pepper (optional, for a spicy kick; adjust to taste)
Optional Add-Ins
-
1 medium potato or sweet potato (diced, for added carbs; omit for low-carb)
With beef and vegetables, it’s packed with protein, fiber, and vitamins like B12 and C for a nutrient-dense option.
Instructions
-
Prepare the Beef: Trim any excess fat from the beef and cut into bite-sized cubes. Pat dry with paper towels to ensure a good sear.
-
Sear the Beef: Heat 1 tbsp olive oil in a large pot or pressure cooker over medium-high heat. Add the beef cubes in batches, searing for 2-3 minutes per side until browned. Remove and set aside.
-
Sauté the Aromatics: In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until softened and fragrant.
-
Add the Vegetables and Spices: Add the sliced carrots, peas, black peppercorns (or ground pepper), and chili pepper (if using). Stir to combine, then season with sea salt.
-
Simmer the Stew: Return the seared beef to the pot. Pour in the beef broth, stirring to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours until the beef is tender and the flavors have melded. Pressure Cooker Option: If using a pressure cooker, cook on high pressure for 25-30 minutes, then release pressure naturally.
-
Adjust Seasoning: Taste and adjust seasoning as needed—add more salt, pepper, or chili for heat. If using potatoes or sweet potatoes, add them during the last 30 minutes of simmering (or 10 minutes in a pressure cooker) to avoid overcooking.
-
Rest and Serve: Let the stew rest for 10-15 minutes off the heat to allow the flavors to deepen. Serve warm in bowls, enjoying the comforting aroma and rich taste. For even better flavor, refrigerate overnight and reheat the next day.
Tips for Success
-
Low-Carb Option: Omit potatoes and sweet potatoes to keep carbs at ~6g per serving; focus on carrots and peas for veggie goodness.
-
Spice Level: Adjust the chili pepper to your preference; skip it for a milder flavor that’s kid-friendly.
-
Vegetable Variations: Swap carrots or peas for other low-carb veggies like zucchini, green beans, or artichokes for a unique twist.
-
Make Ahead: Prepare the stew a day in advance; the flavors improve after resting overnight in the fridge.
-
Storage: Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat gently on the stovetop.
-
Serving Suggestion: Pair with a side of steamed greens or a light cucumber salad for a balanced, low-carb meal.
-
Protein Tip: Choose a tender cut of beef (like rump or cheek) for the best texture; ask your butcher for advice if unsure.
Ready in under an hour with a pressure cooker, this versatile recipe can be customized with your favorite veggies for any occasion.

El estofado de Minnie
El estofado de Minnie es una receta de película, inspirada en el estofado de Los odiosos ocho de Quentin Tarantino, un guiso de invierno muy sabroso.
Ingredients
- 600 gramos carne de ternera en trozos
- 1 cebolla morada
- 1 puerro
- 2 zanahorias
- 1 diente de ajo
- 3 cda tomate natural triturado
- 100 ml vino tinto
- 125 ml caldo de pollo, de cocido o de verduras
- 125 ml agua
- 2 cda aceite de oliva virgen extra
- 1 pizca sal marina
- 1 cucharadita pimienta negra en bolas
- 1 guindilla
- 200 gramos guisantes baby congelados
Instructions
¡Disfruta! 🙂
