
Low Carb Cucumber Salad
Low carb cucumber salad is one of those easy summer dishes that takes 10 minutes to prepare and is perfect as a refreshing side dish. It only takes 3 ingredients and a homemade sauce that you can improvise at any time because the ingredients are usually in everyone’s fridge. The heat has arrived and cold dishes are a must. I’ve talked to you hundreds of times about salads, but I want to do it again because salad is the most common and versatile dish that can exist. There are all kinds, and the one I’m bringing you today is one of the simplest: just 3 ingredients and a delicious, easy-to-improvise sauce. I always prepare it to accompany other recipes. Yesterday I made it for dinner with a leek, onion, mushroom, and bacon quiche and with a keto bread made from ground almonds, cream cheese, and Emmental.
This “low carb” cucumber salad only has 3 ingredients and a very easy homemade sauce.
By the way, you can’t miss this flatbread, I dare say it’s the most delicious dough I’ve ever tasted.
To make the salad you only need a cucumber, a handful of arugula and 1/4 of a red onion, previously marinated in salt.
I advise you to prepare the sauce and mix it immediately, this way the arugula will not wilt and will still be crispy when you eat it.
The sauce is the one I often make based on yogurt, but this time I used skyr, you know, the Icelandic dairy product that is between yogurt and fresh cheese and is rich in protein.
Continuing with the sauce, for two servings use 75 g of skyr, it’s half a terrine of those sold in the supermarket, a tablespoon of mustard, the juice of 1/4 lemon, 2 tablespoons of whole milk, salt and pepper.
Put all the ingredients in a bowl, mix with the sauce and that’s it.
Prepare other easy dishes to accompany it, if like me, you follow a low or very low carbohydrate diet, this salad is a good accompaniment to your main dish.
Cucumber is low in carbohydrates, but it contains cellulose, a non-fermentable fiber that makes it indigestible for some people.
Cucumber stands out for its low carbohydrate content, which is why it is ideal in “low carb” diets.
Properties of cucumber according to BEDCA:
- 12 kcal per 100 g
- Carbohydrates: 0.8 g of fiber and 2 g of carbohydrates per 100 g of edible portion.
- Approximately 90% of its composition is water.
- It has vitamins A, C and folates.
- It contains potassium, phosphorus, silicon and magnesium.
- Soothes the skin.
- There is a Curious fact, it contains cellulose and that is why it can sometimes be indigestible, the reason being that cellulose is a non-fermentable fiber, and some people do not agree with it. This would be the only drawback I could put to it.
Why I like this recipe so much:
- Only 3 main ingredients: cucumber, arugula and red onion.
- I love salads, in general.
- Cucumber is one of my favorite vegetables, it is very refreshing.
- The sauce is rich in protein and provides the fats from dairy products, and is much healthier than an industrial sauce.

ENSALADA DE PEPINO "LOW CARB"
Ingredients
- 40 g rúcula
- 120 g pepino (una unidad)
- 40 g cebolla morada (1/4 de cebolla)
Para la salsa de yogur y mostaza:
- 75 g skyr natural
- 1 cda mostaza
- 1 cda jugo de limón
- 1 pizca sal marina
- 1 pizca pimienta
Instructions
- Corta la cebolla muy fina y deja que macere un rato con sal, para que sude.
- Mezcla todos los ingredinetes en un bol.
- Haz la salsa, solo tienes que integrar los ingredientes.
- Mezcla la salsa con la ensalada.
