Low Carb Moussaka with Cauliflower Bechamel

Make this Low Carb Moussaka with Cauliflower Bechamel in no time—no fats, no sautéing, just vegetables.

A delicious vegetarian dish, for a vegan option avoid any kind cheese, use nutritional yeast instead.

I added Cheddar cheese, which, if it’s good quality, and is naturally low in lactose.

Parmigiano-Reggiano is another great option. But cheese is completely optional, if you want a vegan dish, just skip it.

If you’re lactose intolerant but love cheese, both of these varieties are usually well-tolerated.

In general, aged and well-cured cheeses made from high-quality milk tend to be easier to digest.

Cheeses made from goat or sheep milk are also a great choice, as they’re typically more digestible than cow’s milk cheeses.

The main ingredient in this recipe is eggplant, a low carb vegetable

Moussaka is a traditional Greek dish made with eggplant, minced lamb, and tomato, layered and baked.

This version is a much lighter, vegetarian take on the classic.

I prepared it in a titanium pot over low heat, which helps preserve all the nutrients and flavors of the vegetables without frying or using much (or any) oil.

If you don’t have this kind of pot, you can easily make it in the oven.

Just use a baking dish and grease it with a bit of oil or butter to prevent sticking.

In this recipe, the vegetables are added raw, there’s no need to pre-cook or fry anything in advance.

The only thing that needs to be prepared ahead of time is the tomato sauce.

You can make your own or buy a good-quality one. Just read the label and try to choose a sauce without lots of preservatives, starches, or added sugars.

Cauliflower-based bechamel is dairy-free and very low in calories

To complete this delicious and light vegetable moussaka, make a cauliflower béchamel.

The recipe is super simple—it’s basically a thicker version of my comforting cauliflower cream.

Just reduce the liquid to make it richer and creamier. I’ll explain everything in this post.

Ingredients
  

  • 1 calabacín rallado
  • 1 taza col lombarda picada
  • 2 zanahorias ralladas
  • 1 berenjena en rodajas
  • 2 tbsp salsa de tomate (casera si es posible)
  • 1/2 taza queso cheddar rallado

Instructions
 

  • El primer paso es poner un poco de salsa de tomate en la base, una cucharada repartida por toda la superficie.
  • Pon una capa de rodajas finas de berenjena.
  • Sobre la berenjena pon una capa de zanahoria rallada y otra de calabacín rallado.
  • Ahora añade col lombarda picada y una capa de queso.
  • Repite la operación, otra capa de berenjena, zanahoria, calabacín, col lombarda y queso.
  • Acaba con otra capa de berenjena y termina con queso.
  • Si lo haces en una olla de titanio como yo, deberás poner el fuego al 70% y cuando la olla te avise baja al 30% de la potencia de tu placa y cocinar durante 20 minutos, siempre tapada.
  • Si lo vas a hacer en el horno, precalienta el horno a 200ºC durante 10 minutos antes de meter la musaca, introduce la bandeja y baja la temperatura a 180ºC, hornea entre 25 y 30 minutos, puedes tapar la bandeja con un papel de aluminio y luego gratinar la superficie.
  • Sirve la musaca con una deliciosa bechamel de coliflor, el resultado es un plato muy ligero y digestivo, con pocas calorías y bajo en hidratos de carbono.

Notes

  • Si cocinas la musaca en la olla de titanio, no necesitas añadir sal.
 
  • Si la haces al horno te aconsejo que sazones las verduras de la manera habitual.
 
  • Añade orégano al momento de servir, nunca antes de cocinar la lasaña, de esa manera estará fresco y con todo su aroma.
 
  • Tienes la receta de la bechamel de coliflor en la entrada crema de coliflor reconfortante. Se trata de hacer esa crema, pero más espesa, reduciendo la cantidad de caldo y leche de almendras, pruébala y sírvela con esta lasaña de verduras, gratina con un poco más de queso si te parece necesario, está deliciosa.
 
  • Ten en cuenta que la información nutricional de esta receta se refiere solamente a la musaca, debes consultar las calorías de la bechamel en su propia etiqueta nutricional. (Ya te adelanto que son pocas).
