Returning to today’s recipe, sugar-free panna cotta, it is important to emphasize that It is very light, lighter than the ones you will usually find in bars and restaurants, that is the advantage of cooking at home, I always say it, you control the ingredients! To achieve this, I have replaced part of the cream with whole milk, thus obtaining a lighter, less dense panna cotta, but equally smooth and creamy. The preparation is simple, and you only need a pot, refrigerate it and that’s it, it is an ideal dessert for the summer, very cold it is very pleasant and not heavy at all.

I love it because it is actually a neutral base that you dress with the sauce that you like the most, let me explain, you can add a dark chocolate sauce, a strawberry sauce or a red berry coulis.

Depending on how you accompany it, you will give it a sweeter or more acidic touch.

I usually prepare the panna cotta and on the other hand, I make two sauces, one of dark chocolate and another of frozen red berries, so everyone chooses the one they want.

If you want to know which is my favorite, it depends on the day, I am very acidic, but sometimes I want chocolate, so I can’t opt for neither.

 

Accompany this sugar-free panna cotta with fresh fruit or your favorite sauce.

 

You can also make the panna cotta and accompany it with fresh fruit, whether it be red berries, peaches, figs, or a combination.

The point is that this sugar-free panna cotta is delicious, easy to prepare and a very light and pleasant dessert when it’s hot.

The preparation is exactly the same as that of a traditional panna cotta, replacing the sugar with erythritol (or your preferred sweetener), and using agar agar as a gelling agent, (you can use traditional gelatin sheets or powdered gelatin).

I’m going to give you the proportions to prepare the panna cotta with these ingredients, but as I was saying, you can use the ones you have at home or the ones you prefer.

Ingredients
  

  • 400 ml nata líquida
  • 100 ml leche entera
  • 3 g agar agar
  • 3 cdas eritritol
  • 1 cdita esencia de vainilla

Instructions
 

  • Pon en un cazo la nata líquida (nata para cocinar), y la leche entera, añade el agar a agar en frío y mezcla bien con unas varillas.
  • Enciende el fuego a media potencia y sin dejar de remover lleva a ebullición.
  • Debes seguir cocinando durante 5 minutos aproximadamente, no puedes dejar de remover con las varillas y no subas el fuego, es importante que no se pegue.
  • Añade el eritritol y mezcla bien antes de que espese.
  • Añade la esencia de vainilla, mezcla y deja reposar en un recipiente que aguante el calor. Yo suelo hacerla en una bandeja de vidrio resistente rectangular y una vez cuajada, voy cortando raciones, pero puedes ponerla directamente en recipientes individuales.

Notes

  • Para acompañar la panacota puedes hacer una salsa de chocolate casera, con una onza de chocolate negro 92%, un chorrito de leche y una cucharadita de mantequilla, todo derretido en el microondas a baja potencia.
 
  • Prepara un culís de frutos rojos, en esta entrada tienes la receta, es súper sencillo y muy resultón. Suelo congelar fresas, frambuesas y arándanos cuando veo que se van a estropear, por eso siempre tengo bolsitas en el congelador, a veces los aprovecho para hacer esta salsa.
 
  • También puedes acompañar la panacota de fruta fresca.
 
  • Y si prefieres tomarla tal cual, disfruta del delicioso sabor lácteo.
