Sometimes, when we think about preparing a dessert, the ideas that come to mind are heavy and very caloric recipes, full of sugar and difficult to digest after a meal, when we want to look for alternatives we find ourselves lost, this sugar-free apple cake is a healthy low carb option.

As a dietitian who truly enjoys cooking, I believe that making your own sugar-free and gluten-free cake at home is not only convenient but incredibly empowering.

When you bake at home, you have full control over the ingredients, which is especially important if you’re managing conditions like diabetes, gluten sensitivity, or simply aiming for a healthier lifestyle.

The sugar-free apple cake that I propose today is a delicious, light and healthy bite. It will satisfy your expectations and those of your guests and you will be able to eat it without remorse.

When it comes to cooking an apple cake there are a multitude of recipes, it is a dish that is cooked in almost every home and that can be purchased in all pastry shops.

There are many types, with a sponge cake base, puff pastry, shortcrust pastry, breeze, there are inverted ones, (like the famous Tatin tart), but forget all the known versions and get ready to try a new one.

The sugar-free apple cake that we are going to prepare has apple as its main ingredient, we will make an apple compote flavored with vanilla and cinnamon and we will let it rest, if possible, overnight, but to have consistency, but it does not have flour, instead we will use ground almonds that will give body to the dough and has a mild flavor that it combines perfectly well.

 

The apple is an essential ingredient in my kitchen, delicious, healthy and very versatile.

The apple has multiple benefits for our health, the English saying that says “An apple a day keeps the doctor away”  is well known, and consuming apples regularly can help us in many ways.

The apple is diuretic and purifying, antacid, anti-inflammatory, reduces blood pressure, has expectorant properties and contributes to maintaining dental health. It contains pectins that act as soluble fiber and help control cholesterol and diabetes. It also contains amino acids and is a natural antihistamine.

Sugar-free apple cake

 

To make this recipe, the first thing to prepare is the homemade sugar-free applesauce, since it will be the main ingredient of our cake.

For the sugar-free applesauce you need the following ingredients:

  • 3 apples golden*
  • 1 cinnamon stick
  • 1/2 vanilla bean
  • the juice of 1/2 lemon
  • water

Its preparation is very simple:

To prepare the flavored apple compote, peel 4 golden apples and cut them into pieces, put them in a small pot or saucepan and squeeze the juice of half a lemon, add a cinnamon stick and the pulp of half a vanilla pod (I also add half a pod for extra flavor), then add a splash of mineral water (not to cover the apple) and cook over low heat for 30 – 40 minutes.

When the apple is soft, remove the cinnamon and vanilla pod, and chop everything with a fork. Let it cool and rest. Resting is not essential, but I assure you that if you do, you will get a very aromatic and delicious compote. You can see the full recipe for sugar-free applesauce. Once the compote is ready, we can continue making our cake. To do this, we need to have a cake pan and some basic utensils, which I will explain in detail below.I also recommend that you get a set of measuring cups and spoons, it is the way to measure the ingredients of a recipe in English-speaking countries, I assure you that it is very convenient and worth acquiring, in this blog you will find recipes with traditional measurements, but also with Anglo-Saxon ones.

To make the cake you need:

  • Homemade apple compote
  • Ground almonds
  • Eggs
  • Monkfruit, eritritol, stevia…
  • Coconut oil
  • An apple

Utensils:

  • 17 cm round mold, (a 15 or 18 cm one will also work)
  • A hand whisk
  • A set of cups, (you can easily find the equivalents in milliliters online).
  • A tablespoon

Ingredients
  

  • 1 taza compota de manzana casera sin azúcar (1 taza = 237ml)
  • 1 taza almendra molida
  • 2 huevos camperos
  • 1 cda aceite de coco derretido
  • 1 cda eritritol He editado este ingrediente, antes usaba xilitol, ahora prefiero el eritritol, pero tú eliges.
  • 1 manzanas golden
  • pasas sultanas (opcional)

Instructions
 

  • En un bol mediano batimos los huevos, procuraremos que estén a temperatura ambiente o no muy fríos, añadimos el aceite de coco derretido y mezclamos bien con un tenedor.
  • Ahora es el momento de añadir el endulzante o edulcorante que prefieras, yo uso xilitol* porque no deja sabores indeseados y aguanta bien el horneado. Batimos bien y lo mezclamos con la compota de manzana sin azúcar.
  • Ya tenemos todos los ingredientes húmedos bien integrados, es el momento de añadir la almendra molida, es mejor hacerlo poco a poco para controlar la consistencia de la masa resultante, no queremos que quede muy líquida, pero tampoco demasiado densa, lo dejo a tu criterio, es fácil saber cuándo está bien. Si vemos que 1 taza de almendra es demasiado, es mejor no añadirla toda, si crees que necesita más, añade almendra hasta conseguir la textura deseada*.
  • A continuación echamos la masa en un recipiente para el horno, te recomiendo que sea pequeño, si es redondo, de un diámetro de 17 cm será suficiente, si es cuadrado o rectangular, 20 x 18 cm puede valer. La tarta no te quedará muy alta, si deseas más grosor haz lo mismo con el doble de ingredientes.
  • Cuando tengas bien asentada la masa en el recipiente, coloca trocitos de manzana de manera ordenada cubriendo toda la superficie e introduce en el horno previamente pre-calentado a 200ºC, hornea durante 30-35 minutos a 180ºC. Te aconsejo que los últimos 10 minutos la tapes con un papel de aluminio para evitar que la manzana se queme.
  • Antes de sacar la tarta del horno comprueba que esté bien hecha pinchándola con un palillo, si sale limpio, ya la tienes.
  • Deja enfriar, primero fuera de la nevera y después dentro al menos 2 horas antes de consumirla, de un día para otro todavía está mejor. Puedes acompañarla con una crema de vainilla, con nata montada, helado, nata de coco, chocolate derretido, hay mil opciones... ¡Disfruta! 😉

Notes

Verás qué sabrosa y ligera, ideal a cualquier hora. Como postre puedes acompañarla de un helado de vainilla casero, de crema de vainilla casera, crema fresca, nata montada o de un poco de chocolate negro derretido, las posibilidades son infinitas.

  • Yo suelo usar manzanas golden porque me gusta el punto ácido que tienen, pero también se puede usar la variedad reineta.
  • También puedes añadir unos dátiles machacados o unas pasas y evitar así el uso de edulcorantes químicos, o incluso miel si se adapta a tus necesidades, (no es mi caso).
  • Si te ha quedado la masa demasiado densa puedes añadir un chorrito de bebida de almendras para conseguir la textura deseada, un chorrito de agua también funcionaría.
