  • 1 cup homemade unsweetened applesauce (about 237 ml)
  • 1 cup ground almonds
  • 2 free-range eggs (room temperature)
  • 1 tbsp melted coconut oil
  • 1 tbsp erythritol (or monkfruit, stevia, or your preferred natural sweetener)
  • 1 golden apple (sliced thinly for decoration)
  • A handful of sultanas or raisins (optional)

Instructions

  • Prepare the wet mixture: In a medium bowl, beat the eggs at room temperature. Add the melted coconut oil and mix well. Stir in the erythritol (or your chosen sweetener) and the homemade applesauce until fully combined.
  • Incorporate the dry ingredient: Gradually fold in the ground almonds. Adjust the amount slightly to control the texture: the batter should be moist but not runny, thick but not too dense.
  • Assemble the cake: Pour the mixture into a small baking pan (a 17 cm round pan works well). Arrange thin slices of golden apple on top, creating a rustic design.
  • Bake: Preheat the oven to 200°C (390°F). Bake the cake at 180°C (350°F) for 30–35 minutes. To prevent the apple slices from browning too much, cover the cake loosely with parchment paper during the last 10 minutes.
  • Check for doneness: Insert a toothpick into the center; if it comes out clean, the cake is ready.
  • Cool and rest: Allow the cake to cool first at room temperature and then refrigerate for at least 2 hours before serving. The texture and flavor improve overnight.

Ingredients
  

  • 1 taza compota de manzana casera sin azúcar (1 taza = 237ml)
  • 1 taza almendra molida
  • 2 huevos camperos
  • 1 cda aceite de coco derretido
  • 1 cda eritritol He editado este ingrediente, antes usaba xilitol, ahora prefiero el eritritol, pero tú eliges.
  • 1 manzanas golden
  • pasas sultanas (opcional)

Instructions
 

  • En un bol mediano batimos los huevos, procuraremos que estén a temperatura ambiente o no muy fríos, añadimos el aceite de coco derretido y mezclamos bien con un tenedor.
  • Ahora es el momento de añadir el endulzante o edulcorante que prefieras, yo uso xilitol* porque no deja sabores indeseados y aguanta bien el horneado. Batimos bien y lo mezclamos con la compota de manzana sin azúcar.
  • Ya tenemos todos los ingredientes húmedos bien integrados, es el momento de añadir la almendra molida, es mejor hacerlo poco a poco para controlar la consistencia de la masa resultante, no queremos que quede muy líquida, pero tampoco demasiado densa, lo dejo a tu criterio, es fácil saber cuándo está bien. Si vemos que 1 taza de almendra es demasiado, es mejor no añadirla toda, si crees que necesita más, añade almendra hasta conseguir la textura deseada*.
  • A continuación echamos la masa en un recipiente para el horno, te recomiendo que sea pequeño, si es redondo, de un diámetro de 17 cm será suficiente, si es cuadrado o rectangular, 20 x 18 cm puede valer. La tarta no te quedará muy alta, si deseas más grosor haz lo mismo con el doble de ingredientes.
  • Cuando tengas bien asentada la masa en el recipiente, coloca trocitos de manzana de manera ordenada cubriendo toda la superficie e introduce en el horno previamente pre-calentado a 200ºC, hornea durante 30-35 minutos a 180ºC. Te aconsejo que los últimos 10 minutos la tapes con un papel de aluminio para evitar que la manzana se queme.
  • Antes de sacar la tarta del horno comprueba que esté bien hecha pinchándola con un palillo, si sale limpio, ya la tienes.
  • Deja enfriar, primero fuera de la nevera y después dentro al menos 2 horas antes de consumirla, de un día para otro todavía está mejor. Puedes acompañarla con una crema de vainilla, con nata montada, helado, nata de coco, chocolate derretido, hay mil opciones... ¡Disfruta! 😉

Verás qué sabrosa y ligera, ideal a cualquier hora. Como postre puedes acompañarla de un helado de vainilla casero, de crema de vainilla casera, crema fresca, nata montada o de un poco de chocolate negro derretido, las posibilidades son infinitas.

  • Yo suelo usar manzanas golden porque me gusta el punto ácido que tienen, pero también se puede usar la variedad reineta.
  • También puedes añadir unos dátiles machacados o unas pasas y evitar así el uso de edulcorantes químicos, o incluso miel si se adapta a tus necesidades, (no es mi caso).
  • Si te ha quedado la masa demasiado densa puedes añadir un chorrito de bebida de almendras para conseguir la textura deseada, un chorrito de agua también funcionaría.
