Ingredients
  

  • 300 gramos boniato cocido al horno y pelado
  • 2 huevos
  • 3 cda harina de tapioca
  • 4 cda almendra molida
  • 1/2 cucharadita sal marina
  • 1 pizca pimienta recién molida (opcional)
  • 1/2 cucharadita ajo en polvo

Instructions
 

  • Cuece el boniato al horno, para obtener 300 gramos, con un boniato tuve suficiente.
  • En un bol bate los huevos y añade el boniato cocido y machacado, mezcla bien.
  • En otro recipiente mezcla las harinas, la almendra y la tapioca con la sal, la pimienta y el ajo, mezcla muy bien.
  • Ahora añade la  mezcla de ingredientes secos al bol donde habías batido los huevos y haz una masa homogénea.
  • Distribuye la masa sobre un papel de horno en pequeñas porciones, ayúdate de una cuchara para darles forma. Ten en cuenta que la masa es muy húmeda y no se puede trabajar con las manos.
  • Hornea sobre una rejilla con el horno ya precalentado a 200ºC durante 10 minutos.
  • Saca las bases ya horneadas y ponlas sobre otra rejilla para que se aireen, y se sequen.
  • Ahora ya puedes hacer con ellas lo que te parezca, puedes guardarlas en el frigorífco para más tarde o para el día siguiente. Puedes congelarlas o puedes ponerles encima lo que quieras y hornearlas de nuevo para consumirlas como mini pizzas súper saludables.   • Esta masa se puede usar para hacer bases de canapés, pizzas grandes, o para incluir en algunas recetas, como base para una escalivada, un pescado o una carne, tiene infinidad de aplicaciones.
 
  • Si para tí el huevo es un problema, sustitúyelo por una cucharada de arrurruz o por harina de lino, ambos hacen las veces de aglutinante.
 
  • Si quieres cogelar la masa te aconsejo que formes las bases y las envuelvas en papel film de 4 en 4, separadas por papel encerado o papel de hornear para evitar que se peguen entre ellas.
