
SUGAR-FREE YOGURT SPONGE
If you’ve always liked making cakes at home, but now you hold back when it comes to doing so because you don’t want to abuse the wheat flour or sugar, then you’re going to love this yogurt cake.
You may still think that making a healthy cake that is delicious is impossible. Probably the idea of avoiding wheat flour and sugar when baking seems like sacrilege to you and you think that the result can’t be good in any way.
Well, I assure you that you can make many delicious preparations with other ingredients, using flours that do not come from cereals, adding some healthier starches (for example from roots), and taking advantage of the natural sweetness of some fruits.

In addition, beyond sugar, there are other ways to sweeten the doughs, on the one hand, you can use natural sweeteners such as fresh or dried fruit, stevia (or rather, steviol, which does not affect blood glucose, but has a peculiar taste).
Another option is to resort to polyols (polyols), some of which do not provide calories and do not affect blood glucose, but are not suitable for everyone.
I usually use erythritol, (in this post I told you about it and its uses), when used in small quantities, it does not have any negative effects, but even so, in some people it produces gas and can cause digestive discomfort, (especially in people with IBD, Crohn’s disease, ulcerative colitis, etc.).
Beyond sugar, choose the best way to sweeten your doughs.
But let’s get back to the topic at hand, how to prepare a homemade cake in a healthier way?.

All these recipes have something in common, they do not contain flour from any cereal, but obviously to be consistent they need a dry ingredient, I usually use ground nuts, usually almonds, and I often accompany it with coconut flour, always in smaller quantities.
There are some ingredients that help that the dough acquires elasticity, for example psyllium, or some starches such as cassava or tapioca.
I don’t usually use cornstarch, but it is also a gluten-free option.

Are all cereals bad?
I haven’t said that, but excessive consumption of refined cereals is.

In addition, there are flours of high quality cereals, both wheat and buckwheat, spelt, rye or kamut to name a few examples, which provide other nutrients, such as vitamins, minerals and of course fiber, some of which is soluble.
They provide a lot of energy, so they are ideal for athletes and people with high energy expenditure.
Their glycemic index is lower because the fiber they contain helps the carbohydrates they provide to be metabolized more slowly.
This yogurt cake is filling and easy to digest, perfect for a special breakfast or snack.
In this post I want you to see how easy it is to make an almond and yogurt cake, if you have children, a two-finger piece thick for breakfast will be enough to hold them over until lunchtime, due to its satiating effect and how nutritious the almond is.
I decorated it with previously baked apple, I put it on the surface of the dough before baking it and the result was great, if you notice I left a third empty, that’s the part of my daughter, who prefers it as is.

BIZCOCHO DE YOGUR SIN AZÚCAR
Equipment
- Horno de convección
Ingredients
- 1 taza almendra molida fina
- 3 cda harina de coco
- 1 cdita levadura química
- 2 cda eritritol (o estevia)
- 2 huevos
- 125 g yogur griego (1 unidad)
- 125 ml leche o bebida vegetal (puedes usar el recipiente del yogur como medida)
- 1 cda mantequilla derretida (o aceite de coco)
- 1/4 cdita esencia de vainilla (opcional)
- 1 manzana
- canela
- piel de naranja y de limón
- un chorrito de agua
Instructions
- Asa manzanas, sigue esta receta sin azúcar.
- Mezcla los ingredientes secos en un bol.
- Mezcla los huevos batidos con el resto de ingredientes húmedos, la leche, el yogur, la mantequilla derretida y opcionalmente, 1/4 cdita esencia de vainilla.
- Mezcla todos los ingredientes.
- Precalienta el horno a 200ºC
- Pon la masa en un molde rectangular y sobre ella la manzana asada cortada en gajos.
- Hornea a 180ºC durante 40 min aproximadamente, vigila que la superficie no se queme, cuando esté dorada seguramente estará hecho, para asegurarte, pincha el bizcocho con un palillo en la parte central, si sale limpio está hecho, pero si ves que el palillo sale con masa, déjalo en el horno 10 minutos más, si la superficie ya está dorada y no quieres que se queme, tápalo con papel de aluminio.
- Deja enfríar antes de servir.

Hola, no sé si lo preguntas porque eres intolerante a los frutos secos, en ese caso usa harina de avena mezclada con un poco de almidón de yuca, pero lamentablemente no puedo darte medidas, este bizcocho está inspirado en el clásico hecho con harina de trigo. Ten en cuenta que cada harina se comporta diferente, puedes probar con harina de trigo sarraceno, mezclada con harina de coco, harinas de semillas, pero como te decía, no te puedo dar una receta.
