But, in addition to its organoleptic properties, there is something that I like even more, it is its nutritional properties, low in calories, rich in water, with fiber and very low in carbohydrates.

There is a curious fact, it contains cellulose and that is why it can sometimes be indigestible, but this effect only affects some people, it is not widespread.

To prepare this healthy appetizer, you need cucumber, cream cheese, Greek yogurt or kefir, lemon juice, spices (dill, pepper), and different ingredients to make these fresh “canapés” varied.

I usually add smoked salmon, anchovies, pickled anchovies, cherry tomatoes, chili rings, spicy gherkins, various pickles, and if I have fermented vegetables like carrots or red onion on hand, too.

It’s as simple as cutting some thick slices of cucumber and making a small hole in the center and filling them with the cream cheese sauce, top with the different ingredients that I mentioned before and that’s it.

Sometimes we think that an easy appetizer is fried foods or puff pastry miniatures, and no way! An easy appetizer is these healthy cucumber bites, or some cherry tomatoes with mozzarella and basil, some clams with mango and vinaigrette or some Roquefort and pear skewers.

  • Soothes the skin.
  • It contains cellulose and that is why it can sometimes be indigestible, the reason being that cellulose is a non-fermentable fiber, and some people do not agree with it. This would be the only drawback that could be put to it.

 

A fresh yogurt and cream cheese sauce is the touch that gives it juiciness and flavor.

 

In addition to the cucumber, it is essential to prepare a sauce so that the result is juicy, for this recipe I usually make a fresh Greek yogurt and cream cheese sauce and add the cucumber that I have removed to make the holes.

It is very important to season it with lemon juice, olive oil, salt, pepper and dill, if you want to give it a plus, add some capers. Make a sachet of sauce and serve it with the cucumber canapés, so everyone can add more if they want.

Ingredients
  

  • 250 g pepino (2 unidades)
  • 1 cda queso crema
  • 125 g yogur griego
  • 1 cda jugo de limón
  • 1 cucharadita eneldo
  • 1 pizca pimienta negra
  • 1 pizca sal marina
  • 50 g salmón ahumado
  • 1 guindilla
  • 4 anchoas
  • 4 tomates cherry

Instructions
 

  • Prepara la salsa, con el queso crema y el yogur griego, el jugo de limón, el eneldo, la sal y la pimienta, remueve bien y reserva en la nevera.

  • Pela los pepinos, no del todo, quita una tira de piel y otra no.
  • Corta los pepinos en rodajas gruesas.
  • Con una cucharita de hacer bolas, vacía cada rodaja, solo un poquito.
    Elaboración bocados de pepino
  • Rellena cada trocito de pepino con la salsa de yogur y queso crema, y pon encima trocitos de salmón, de anchoa, unos aros de guindilla, rodajas de tomate cherry, haz diferentes combinaciones. Yo en esta ocasión he usado salmón ahumado, alcaparras y eneldo.

  • Si preparas este aperitivo un rato antes de servirlo, reserva en la nevera tapado para que no se seque la superficie y sirve cuando lo vayáis a consumir.
