Gluten-free Gravy

La salsa de carne (gravy), es una receta de salsa espesa muy sabrosa para acompañar platos de carne y sus guarniciones, (arroz, puré de patata, verduras).

There are dishes that need sauce, let’s not fool ourselves, and sauces that need dishes, well, maybe this is unnecessary…

What I want to emphasize is the fact that seasoning some dishes with tasty sauces to enhance their flavor and make them much more attractive is a good idea, and that does not mean we are going to spoil our eating plan.

We can improve our dishes and continue to maintain our “nutritional principles”

If there is a sauce that has traditionally fulfilled that function (that of enriching other preparations), it is gravy, an English sauce used to accompany meats, whether it be the classic roast (roast beef), a roast turkey, or a meatloaf, it is also usually used to season side dishes, mashed potatoes, sweet potato, vegetables steamed or rice.

My gravy recipe is very easy and healthier than the traditional one, and it’s also gluten-free so even those with individuals with celiac disease or gluten intolerance can have it.

Gravy is a thick, silky-textured sauce that goes perfectly with meat dishes and their side dishes.

 

I’m going to show you a very simple way to prepare my gluten-free version.

If you use tapioca flour instead of chickpea flour, it’s also a paleo recipe.

And keep in mind that the more flavorful and concentrated the broth, the tastier the sauce will be.

Salsa de carne (Gravy)

La salsa de carne (gravy), es una receta de salsa espesa muy sabrosa para acompañar platos de carne y sus guarniciones, (arroz, puré de patata, verduras).

Ingredients
  

  • 8 gr mantequilla
  • 1 taza caldo de carne*
  • 2 cda harina de garbanzo

Instructions
 

  • En un cazo o sartén derrite la mantequilla.
  • Añade la harina y no dejes de remover hasta que se forme el roux, cocínalo unos minutos, mucho cuidado, que no se queme.
  • Añade el caldo poco a poco, sigue removiendo con una cuchara de madera, verás como el caldo va espesando, adquiere cuerpo y se convierte en una salsa.
  • Corrige el punto de sal, añade pimienta si lo crees necesario y ya lo tienes.

Notes

  • Puedes usar caldo de carne casero o un caldo envasado de buena calidad, otra opción para salir del paso es preparar un caldo con una cucharadita y media de Bovril y una taza de agua caliente, si optas por esta última, ten en cuenta que el Bovril sí que contiene gluten.*
 
  • Para el roux puedes usar aceite de oliva virgen, pero la mantequilla le dará un toque más suave a la salsa y su sabor es más suave.
 
  • Para una opción paleo, sustituye la harina de garbanzo por harina de tapioca, el resultado es igual de bueno.
