CAULIFLOWER BOLOGNESE

Enjoying a good Bolognese sauce doesn’t have to mean eating a dish rich in carbohydrates, with this CAULIFLOWER BOLOGNESE you’ll see that.

We’re used to eating Bolognese sauce as an accompaniment to a great plate of pasta, but that can change.

You can enjoy this wonderful sauce, which I told you about here, without having to resort to traditional wheat pasta.

Be careful, I’m not saying you should stop eating wheat pasta, I’m just giving you other options.

There are many people who can’t consume such a large amount of carbohydrates in one meal, or are gluten intolerant.

 

Cauliflower It is a low-carb alternative to pasta or rice.

 

Other people are following weight loss diets and need to change their habits; reducing flour consumption is one of the steps to follow from the beginning.

And there are also many people who are increasingly informed and know that certain refined cereals contribute to intestinal permeability.

The continued and abusive consumption of refined flours, which include white wheat pasta, contributes to inflammation of the intestinal mucosa and permeability.

Let me tell you something, before entering the low-carb diet, since I was already experiencing small health problems, I was always looking for solutions to my “ills”.

I started with physical exercise and everything suddenly improved, but there was still something to solve.

Knowing that food is the other great pillar of well-being, I tirelessly dedicated myself to looking for solutions, but it was very difficult.

Ignorance made me fall into the same mistakes, too many carbohydrates, even if they were supposedly healthy, little protein and less fat.

 

The lack of information blinds us, and does not let us move forward.

 

With this pattern things did not improve, in the short term I could lose some weight, but I quickly gained it back, my blood sugar was not stable, there were ups and downs (although I did not know it).

Despite having improved thanks to the practice of strength exercises, in a scheduled and regular manner, I was still experiencing problems.

Moments of absolute fainting in the middle of the morning, uncontrolled hunger, anxiety about food, recurrent urinary infections, etc.

It would take a few years to find out what was happening to me, I was pre-diabetic without know it.

You might think that because of laziness I didn’t get the relevant tests done, that I didn’t give it any importance or that because I was young, I thought I was immortal, but quite the opposite was true.

I was very worried about not understanding what was happening, I went to the doctor continuously, they did tests on me, my basal blood glucose was usually over 100, but it seems that my doctor thought it was very normal.

I was in my early 30s and at that age, my basal blood glucose should have been lower, and I ask myself, why was I never given the glycated hemoglobin (HbA1c) test?

And it wasn’t until the analysis of the first trimester of pregnancy showed a basal glucose too high, that public health was concerned about looking into it further.

By then, 5 more years had passed, I was diagnosed with gestational diabetes and I was given the typical “drawer diet”, a plan of 5 – 6 daily intakes, with bread, pasta and rice, whole grain preferably, of course. (I still have it saved in my pregnancy folder, these kinds of documents will go down in history).

At first it was a complete shock, it was very difficult for me to accept and also to handle it, but very soon I started to investigate and I realized that there were alternatives, it was the year 2011.

 

Treating a diabetic patient with a “cookbook diet” is insane, but it is still being done.

 

By then, a lot had already been written about diabetes and its management, there were already websites and doctors who were spreading the word about the best way to control blood sugar, unfortunatelyemently, not in Spain, but in the US.

I stopped listening to my midwife, that lady who knew nothing about nutrition, but was dedicated to giving advice left and right on the subject. (I’m sure not all of them are like this.)

I started reading studies that reflected the importance of reducing the amount of carbohydrates in the diet, increasing the amount of protein, and eating healthy fats.

At first it was difficult, I had to change my strategy and it wasn’t overnight, it was progressive.

 

We live in an obesogenic environment, the food industry makes us sick and escaping from there is not easy.

 

That is why my recommendation is always the same, take control of your health, become the leader of your good habits, because if you don’t do it, no one will.

Don’t get carried away and don’t blindly trust anyone, follow your instinct, investigate, there is a lot of scientific literature, when your diagnosis comes, don’t lower your head, lift it up, look ahead and look for the best solution.

The world is full of examples like mine, people who have taken a long time to find the keys to their health, but when they have, they have been able to make a change and improve.

And they have surely improved much more than that they would have done if they had simply followed the premises of what was pre-established.

For all these reasons, looking for alternatives is always positive, this is the main objective of my blog, for you to understand that this is not a whim, it is a necessity.

Having information and being able to process and understand it is what makes you stronger, because we are all different, each case is unique.

 

Reducing the consumption of refined carbohydrates with respect to the current standard is crucial.

 

Why you should reduce the consumption of pasta and refined carbohydrates:

  • Uncontrolled consumption of carbohydrates destabilizes your blood glucose levels and promotes insulin resistance.
  • They promote hyperinsulinemia.
  • Excessive consumption on a continuous basis promotes generalized inflammation of the body.
  • It contributes to intestinal permeability.
  • In addition, it is a risk factor for the development of non-alcoholic fatty liver disease (NAFL).

 

Alternatives to wheat pasta:

  • You can use vegetables as the base of your dish: zucchini and carrot spaghetti, cauliflower and broccoli florets, Brussels sprouts, etc.
  • Konjac is a good alternative to traditional pasta; there are currently many formats on the market: spaghetti, linguine, rigattone, etc.
  • Let’s not forget legume pasta, the most common are red lentils, chickpeas and peas, you can also find edamame pasta.

 

Cauliflower Bolognese will make you enjoy it just like a plate of pasta and your health will thank you.
