
MUSHROOM CURRY
I’ve been thinking about making a curry for days, and today I finally decided to make this mushroom curry. It’s very easy and its intense, multi-nuanced flavor will exceed all your expectations.
But do you know what a curry is? It’s a simple, highly spiced stew that can be made with vegetables, meat, or fish. Without being an expert, I’d say that it’s the best-known dish in Indian cuisine. There are hundreds of recipes, and every home has its own.
This mushroom curry contains coconut milk and homemade garam masala.
To prepare this Indian-style mushroom curry, you need a spice mix that’s very typical of Indian cuisine: Garam Masala, you probably know it or maybe even have it at home.
If you don’t have this mix in your pantry, preparing it is very easy. I usually make it at home, without a grinder or robot, by hand, and you can see how in this link.
In addition to the Garam Masala, to prepare this mushroom curry you will need that, mushrooms, and a few more spices, you also need coconut milk, vegetable broth or water and a few drops of lemon juice.
To sauté the mushrooms I used a tablespoon of coconut oil, if you don’t have it, you can use any vegetable oil, such as olive oil.
Easy, right?
This is a vegan recipe, so it is suitable for everyone, and it can be accompanied by many things.
Mushroom curry is a vegan dish that can be accompanied with legumes or cereals such as rice.
For the vegan-vegetarian version, you can add chickpeas, cooked lentils, or basmati rice.
If your diet is omnivorous, chicken goes very well with it. It can also be accompanied with boiled eggs or Indian-style meatballs (known as kofta).
As I was saying, it is a very basic stew that works well with other foods. On this occasion, I made it with mushrooms because that’s what I had, but you can make a curry with a variety of vegetables.
For example, with carrots, onions, broccoli, peas, tomato, etc., adding garam masala, turmeric and other spices, with ginger paste and water, without the need to use coconut milk.
Curry allows for many variations and as I was saying, in each area of India there are different specialties.

MUSHROOM CURRY
This Indian-style mushroom curry is a simple stew with a lot of flavor thanks to the Garam Masala and the rest of the spices it contains.
- 250 g fresh mushrooms
- 1/2 teaspoon Homemade Garam Masala ((Or commercial))
- 1/4 teaspoon Ground turmeric
- 3 chillies (cayenne)
- 1/4 teaspoon lemon juice
- 200 ml coconut milk
- 1/2 tbsp coconut oil
- 1 cup vegetable broth
- fresh cilantro
- sea salt

In a pot add the coconut oil and sauté the sliced mushrooms. Season.

Add the Garam Masala and the rest of the spices.

Now add the coconut milk and vegetable broth. Let it cook for 10-15 minutes over moderate heat so that it reduces a little and the flavor is more concentrated.

Add a few drops of lemon or lime juice.

Taste to see if you like the taste, you can add more salt if you think it needs it. If it is too strong, you can also addYou can reduce it with a little more broth.

Serve the curry with some fresh cilantro leaves and enjoy.
