
Spinach with chicken and mushrooms
This spinach with chicken and mushrooms dish is very easy to make and is another one of those express recipes that I love.
As I have told you on other occasions, there are times when you have to improvise and act quickly and effectively, that is when it is convenient to have resources like this.
It is a bowl with spinach, chicken, mushrooms, Roquefort and to top it off, the fresh touch of avocado.

This stir-fry is easy and quick, ideal for diets to control weight.
What is true is that to improvise you have to have a minimum assortment of products at home, that is, when we do the weekly shopping we have to plan more or less what we are going to need.
I advise you to always buy fresh vegetables and that you vary, if one week you buy spinach, carrots and zucchini, the next you can buy eggplant, peppers and mushrooms, for example.
It is important to take the seasons into account, if you buy seasonal products, they will be of better quality and fresher, and the price will be lower.
The combinations will depend on your tastes and the recipes you are going to prepare, but keep in mind that planning is essential.
When I prepared this dish I had spinach, mushrooms, leeks and spring onions and I decided to combine everything to accompany chicken, it is actually a simple sauté served with some fresh spinach leaves and some avocado slices.
To give it flavor I added Roquefort cheese in pieces, just before serving it, when it was very hot so that it would melt, delicious.
Preparing it is very easy, you have to sauté the different ingredients, first the chicken, then the spring onion and leek, the mushrooms and finally add the spinach.
I added the cheese at the last moment, already off the heat.
To serve it, I started by placing the fresh spinach leaves at the base of the bowl, then I added the sauté with the Roquefort and finally, just at the time of serving, I cut the fresh avocado. A little flaked salt and freshly ground pepper.
The result is a delicious, easy, and very nutritious dish.

ESPINACAS CON POLLO Y CHAMPIÑONES
Ingredients
- 300 g pechuga de pollo
- 200 g espinacas fresca
- 100 g cebolleta (1 unidad)
- 75 g puerro (1 unidad)
- 125 g champiñones frescos
- 50 g roquefort
- 100 g aguacate (media unidad)
- 1 cda AOVE
Instructions
- Empieza cortando la pechuga de pollo en tacos, salteála en una sartén con AOVE.
- Añade la cebolleta y el puerro cortados en brunoise , y saltea también.
- Ahora los champiñones cortados en cuartos.
- Después las espinacas.
- Cuando ya estén pochadas, saca del fuego y añade el roquefort desmigado.
- Sirve en un bol con hojas de espinacas frescas y decora con el aguacate en lonchas.
- Sazona y añade pimienta, si te gustan las semillas, las de sésamo y amapola le van muy bien.
