What I do is simply take advantage of my free time (2-3 hours) to make different recipes that can solve my dinners or meals in the following days.

I don’t necessarily do it on the weekend, I take advantage of a morning or afternoon when I’m less busy to cook it or during the midday hours, where there is always a gap.

This easy meat roll is ideal to accompany with a little green, any salad, broccoli, sautéed cabbage, mushrooms, whatever you want!

The basic ingredient is minced meat, it can be beef, or beef and pork, you can also use minced chicken, I leave it to your choice.

The most important thing is to season the meat to give it flavor, you can also make a sofrito and add it as a filling, but I prefer to prepare a good vegetable sauce to go with it.

In this recipe I don’t add many spices, just the necessary ones to provide a special point of flavor, but I avoid cayenne, cumin, cinnamon, I also don’t put mustard or Perrins sauce, I love both things, but this time the recipe is family-friendly and the children usually like it more “plain”

The result has been great, tasty and to everyone’s liking.

 

Once cold, cut it thinly and eat it like a cold cut.

 

After a few days you can cut this meat roll into thin slices and eat it as if it were a cold cut, it is delicious, you can add it to a sandwich, toast or eat it alone with cheese, nuts, etc.

Ingredients
  

La carne

  • 500 g carne de ternera picada O mezcla de ternera y cerdo
  • 1 cdita sal marina
  • 1 cdita ajo en polvo
  • 1 cdita orégano seco
  • 1 cdita tomillo seco
  • 1 cdita hierbabuena seca
  • 1/2 cdita pimienta blanca molida
  • 2 cdas leche entera O leche vegetal

El relleno

  • 2 salchichas frescas
  • 4 lonchas de cecina
  • 3 lonchas queso gouda O el que más te guste
  • 12 espárragos trigueros finos

La salsa

  • 1 diente de ajo
  • 75 g cebolleta 1 ud
  • 100 g puerro 1 ud
  • 100 g zanahoria 1 ud
  • 200 g tomate natural troceado en conserva media lata
  • 1 cda aceite de oliva virgen extra
  • 3/4 taza caldo de pollo O de verduras
  • 1/2 cdita cúrcuma
  • 1 pizca pimienta blanca molida
  • 1 pizca sal marina
  • 1 cda queso crema opcional

Instructions
 

Rollo de carne relleno

  • En un bol mezcla la carne con todas las especias y la sal, añade la leche y amasa muy bien. Mientras preparas los ingredientes del relleno, guarda la carne ya amasada en la nevera para que coja consistencia.
  • Pasados unos minutos, extiende papel film sobre el banco de la cocina, pon la carne sobre el film, extiéndela manualmente por toda la superficie formando un rectángulo.
  • En la parte central pon los ingredientes del relleno, pero de manera ordenada, primero las lonchas de cecina, después el queso, en el centro las salchichas y a su lado los espárragos.
  • Enrolla la carne, ayúdate del papel film para darle forma, procura que quede uniforme, con el mismo grosor en los diferentes lados.
  • Hornea el rollo de carne a 180ºC durante 30-35 minutos. Mientras prepara la salsa.

Salsa de verduras

  • En una olla pequeña sofríe la cebolleta y el puerro cortados en juliana con una cda de aceite de oliva virgen extra.
  • Añade la zanahoria pelada y cortada en trozos. Rehoga.
  • Añade el tomate natural troceado, y sofríe también.
  • Ahora pon las especias, puedes variarlas a tu gusto. Me gusta poner cúrcuma porque además de sabor da mucho color.
  • Añade el caldo y deja cocer, 10-15 minutos.
  • Tritura la salsa y añade una cucharada de queso crema para que quede más suave. (El queso crema es opcional).
