SUGAR-FREE MERINGUE MARSHMALLOWS

Learn how to make sugar-free meringue clouds, it may be the softest and most delicate bite I’ve ever tasted.

These days I’ve been trying to make a lemon pie, as you know, the classic lemon pie has three parts, the base, which is usually a shortcrust pastry, the cream, which is made with lemon and eggs, and the meringue that gives it that spongy and delicate touch.

As you can imagine, I’ve been making each of those parts without using sugar and reducing carbohydrates as much as possible in order to achieve a lighter, diabetic-friendly version of this classic dessert.

 

Sugar-free meringue clouds are a delicious bite, love it.

 

Of the three layers that make up the cake, the most complicated was the meringue, but in the end, since “every cloud has a silver lining”, I ended up with a delicious meringue that I turned into little clouds.

I used these delicate clouds to crown the sugar-free lemon cake and I saved the rest to eat as is, with a little lemon zest and some mint leaves. They are a delight!

To make these meringue clouds I used three egg whites at room temperature, this is very important, and to sweeten it I made a syrup with erythritol and water.

For the meringue to whip up correctly, it needs an acidic element, a few drops of lemon juice will be enough and a pinch of salt.

It’s very easy, when you have them almost at the point of snow, add the syrup very little by little, in the form of a thread while continuing to beat with the electric beaters.

 

Bake the meringue clouds at a low temperature, they are very delicate.

 

Once finished, you can bake it, I did it like this, crazy, without shaping them, but you can make perfect clouds with the help of a pastry bag.

In the oven you will get them dry on the outside and keep their softness and spongy texture on the inside.

But there is a trick, the oven temperature must be low, between 90 and 100ºC, do not stop watching, in a few minutes they will be golden brown.

Once they’re cold, you can eat them as is or add them to other recipes, such as a lemon tart, or to top off a good coffee.

One more idea for preparing healthy, light sweets that are ideal for satisfying that need we sometimes have for dessert, without having to ruin our diet.

Ingredients
  

  • 3 claras de huevos frescos a temperatura ambiente (no funciona con claras de huevo pasteurizadas)
  • 1 pizca sal
  • 3 gotas jugo de limón
  • 2 cda eritritol
  • 3 cda agua filtrada o mineral

Instructions
 

  • Empieza haciendo el jarabe, en un cazo pon el agua y el eritritol, cuando empiece a burbujear deja que reduzca hasta que adquiera consistencia de jarabe.
  • En un bol amplio, monta las claras añade las gotas de jugo de limón y la sal desde el principio.
  • Cuando estén casi a punto de nieve añade el jarabe en forma de hilo y sigue batiendo hasta que el merengue esté firme.
  • Reparte el merengue en montones irregulares sobre una superficie antiadherente y hornea a 90ºC durante 5-10 minutos, dependerá de tu horno. No dejes de vigilarlo para que quede dorado, pero no se queme.
  • Usa las nubes de merengue ya frías para tomarlas tal cual, para hacer otros postres o para coronar una buena taza de café. Si las guardas en la nevera, al día siguiente estarán deliciosas.

Notes

Muy importante:
  • Las claras deben ser de huevos frescos y estar a temperatura ambiente.
  • Es importante añadir ácido, en este caso las gotas de jugo de limón.
  • El almíbar o jarabe hecho con eritritol debe añadirse en forma de hilo sin dejar de batir.
  • La temperatura del horno debe ser baja para que la superficie de las nubes de merengue no se queme enseguida.
