To make these Sugar-free almond chocolate biscuits I use a product that is not yet very popular here in Spain, although it is easy to buy in any organic food store or herbalist.
I am referring to almond butter, it is a paste made with one part raw almonds and one part toasted almonds, what gives it a more intense and special flavor.
This almond paste is quite caloric and energetic, but very healthy.
Mixed with other ingredients, we get incredible textures without the use of refined wheat flour, so it is also an alternative to prepare gluten-free spongecakes.

I usually make almond biscuits with 85% dark chocolate. I love the bitter touch that pure chocolate provides, but there are other alternatives.
You can cut some dates into small pieces, add some sultanas, dried cranberries, the options are infinite.

Bizcochitos de almendra y chocolate sin azúcar
Ingredients
- 2 huevos camperos
- 2 cda sopera mantequilla de almendra
- 2 cda sopera almendra molida
- 2 cda sopera coco rallado
- 2 cda sopera azúcar de abedul (xilitol)
- 4 cda postre aceite de coco derretido
- 2 onzas chocolate negro 85%
Instructions
- En un bol mediano bate los huevos, añade el aceite de coco derretido y el azúcar de abedul (xilitol).
- Incorpora la mantequilla de almendras, intenta integrarla en la mezcla. Utiliza un tenedor o una varillas pequeñas y bátelo bien.
- La mezcla todavía resulta muy líquida, hay que espesarla, para ello añade la almendra molida y el coco rallado poco a poco. Debes conseguir una masa espesa.*
- Es el momento de añadir a la masa el chocolate 85%* troceado, mezcla bien.
- Precalienta el horno a 200ºC durante 10 minutos.
- Prepara una bandeja de horno, fórrala con una hoja de papel para hornear o usa una lámina de silicona para horno, el objetivo es que los bizcochitos no se peguen.
- Con dos cucharas soperas reparte la masa* en montoncitos por toda la superficie, deja espacio suficiente entre ellos para evitar que se peguen cuando se cocinen.
- Hornea durante 15 minutos a 180ºC, puede que sea un poco menos si tu horno es muy potente.
- Sácalos del horno y deja enfriar al menos durante 10 minutos. ¡Ya están listos! Devóralos y si te sobra alguno, cosa que dudo, guárdalo en una recipiente hermético, si los dejas en el frigorífico pueden aguantar hasta cuatro días sin problema. ¡Salud! 😉

Te animo a que los pruebes, son muy fáciles de hacer y no se necesita demasiado tiempo, lo ideal es hacer una buena cantidad y guardarlos en el frigorífico, aguantan perfectamente hasta una semana.
